Pizza Soup

Pizza Soup gives you all of the flavors of a classic sausage and pepperoni pizza in a flavorful and satisfying soup! Who knew you could eat pizza with a spoon?!? So, if you love pizza, but don't want the carbs from the crust, this one-pot meal is your answer!

Ingredients

  • 1 pound mild Italian sausage
  • 1 large green bell pepper, seeded, diced (about 1 cup)
  • 1 medium yellow onion, diced (about 1 cup)
  • 1 tablespoon garlic, minced
  • 4 cups (32 ounces) chicken broth
  • 1 can (28 ounces) crushed tomatoes
  • 1 jar (14 ounces) pizza sauce
  • 1 package (6 ounces) pepperoni, quartered, reserving some for garnish
  • 2 teaspoons Italian seasoning
  • ¼ teaspoon crushed red pepper
  • 1 cup (100 g) parmesan cheese, finely shredded

Instructions

  • To a large pot or Dutch oven over medium heat, add Italian sausage, peppers, and onions. Cook, stirring occasionally, breaking up the meat as you go, until the meat is no longer pink (8-10 minutes). Add garlic and cook for 1 more minute. Drain excess grease.
  • Slowly add chicken broth, scraping up the browned bits as you go.
  • Add tomatoes, pizza sauce, pepperoni, Italian seasoning, and crushed red pepper. Bring the soup to a simmer (3-5 minutes), stirring occasionally. Add parmesan and stir until the cheese has melted.
  • Garnish with basil, parmesan, and reserved pepperoni. Serve warm.
