Ingredients & Substitutions

Sausage: I added mild Italian sausage to the soup. You could certainly use sausage with your preferred spice level. Or, try it with ground beef, but you may need to add a bit more seasoning since Italian sausage is already seasoned.

Vegetables: I added onions, green bell peppers, and garlic to the soup. They help with the overall flavor of the soup. However, if you are not a fan of onions or green peppers, you could lessen the amount added.

Chicken Broth: Chicken broth is the base of the soup. You could substitute chicken stock if that is what you have on hand.

Pizza Sauce: To add a concentrated pizza flavor to the soup, I added pizza sauce, complementing the crushed tomatoes. Choose your favorite brand or make homemade pizza sauce.

Pepperoni: When pepperoni is cut into quarters, it adds even more flavor to the soup. Reserve some pieces for garnish.

Crushed Red Pepper: Crushed red pepper (red pepper flakes) gives a little bit of a kick to each bite of soup. You can leave those out if you don’t want spice. Or, add more for even more heat!

Parmesan Cheese: Parmesan cheese is added to the soup as well as used for garnish.

How To Store Pizza Soup

To store pizza soup, first, let it cool to room temperature. Next, store it in an airtight container (or portion out to smaller containers) to keep in the refrigerator. It will last up to 2-3 days. Reheat the soup on the stovetop or in the microwave. The flavors blend nicely as it is stored, so it will be a delicious bowl of leftovers, for sure!

Can I Freeze Pizza Soup?

Yes, you can freeze pizza soup. To freeze, first, let the soup cool to room temperature. Next, store it in a freezer-safe container or bag. Leave a bit of room in the container for expansion. Freeze the soup for up to 2-3 months. When ready to reheat it, let it thaw in the refrigerator overnight.

Ingredients

  • 1 pound mild Italian sausage
  • 1 large green bell pepper, seeded, diced (about 1 cup)
  • 1 medium yellow onion, diced (about 1 cup)
  • 1 tablespoon garlic, minced
  • 4 cups (32 ounces) chicken broth
  • 1 can (28 ounces) crushed tomatoes
  • 1 jar (14 ounces) pizza sauce
  • 1 package (6 ounces) pepperoni, quartered, reserving some for garnish
  • 2 teaspoons Italian seasoning
  • ΒΌ teaspoon crushed red pepper
  • 1 cup (100 g) parmesan cheese, finely shredded
  • fresh basil, for garnish

Instructions

  • To a large pot or Dutch oven over medium heat, add Italian sausage, peppers, and onions. Cook, stirring occasionally, breaking up the meat as you go, until the meat is no longer pink (8-10 minutes). Add garlic and cook for 1 more minute. Drain excess grease.
  • Slowly add chicken broth, scraping up the browned bits as you go.
  • Add tomatoes, pizza sauce, pepperoni, Italian seasoning, and crushed red pepper. Bring the soup to a simmer (3-5 minutes), stirring occasionally. Add parmesan and stir until the cheese has melted.
  • Garnish with basil, parmesan, and reserved pepperoni. Serve warm.
