Bacon Jam Meatloaf

If you are looking for an easy meatloaf recipe with big flavor, this Bacon Jam Meatloaf is one to try. It’s my juicy, tender Honey BBQ meatloaf (which is delicious on its own, too!) with a sweet and savory homemade onion bacon jam topping that takes it over the top.

Ingredients

  • 2 pounds ground beef
  • 1 pound ground pork
  • 2 large eggs, beaten
  • 2 teaspoons kosher salt
  • ½ teaspoon black pepper
  • ½ cup (122.5 g) whole milk
  • 1 teaspoon Worcestershire sauce
  • ½ cup (54 g) fine dry breadcrumbs, plain
  • 2 teaspoons garlic, minced
  • ½ cup yellow onion, finely chopped
  • 1 ½ cups bacon jam

Instructions

  • Preheat the oven to 350°F. Spray a large loaf pan (6 ½ x 10 inches) with nonstick cooking spray. Set aside.
  • In a large bowl, combine ground beef, ground pork, eggs, salt, and pepper. Mix until just combined.
  • In a separate bowl, stir together the milk, Worcestershire sauce, breadcrumbs, garlic, and onion.
  • Add the milk mixture to the meat mixture. Mix gently by hand or with a spatula until fully incorporated. Avoid overmixing.
  • Shape the mixture into a loaf about 8–9 inches long and 4–5 inches wide, making sure it's evenly shaped for even cooking.
  • Place the meatloaf in the prepared loaf pan. Bake for 40 minutes.
  • After 40 minutes, remove the meatloaf from the oven and spread bacon jam evenly over the top.
  • Return the meatloaf to the oven and continue baking for 15-20 more minutes, or until the internal temperature reaches 160°F.
  • Let the meatloaf rest for 5–10 minutes before slicing and serving.
