- 1 medium beetroot, peeled, sliced
- 1 teaspoon extra virgin olive oil
- 1 large carrot, chopped
- 1 large Granny Smith apple, cored, sliced
- 1 cup (123 g) raspberries, fresh or frozen
- 1 cup coconut water
Preheat oven to 400°F. Line a baking sheet with parchment paper.
Toss the beet slices with olive oil until lightly coated. Spread them out on the baking sheet in a single layer.
Roast for 25 to 30 minutes, or until tender and slightly caramelized. Let cool slightly.
Add the roasted beet, carrot, apple, raspberries to a blender.
Blend on high for 30 to 60 seconds, or until smooth.
Pour the mixture through a fine-mesh sieve into a large bowl, using a spoon to help push the juice through. (For an extra-smooth shot, use a cheesecloth instead.)
Stir the coconut water into the strained juice until fully combined.
Use a funnel to fill small glasses or shot bottles with the juice. Repeat until all juice is poured.
Seal the bottles or cover the glasses and place them in the refrigerator to chill before enjoying.
Shake or stir well before drinking, as natural separation will occur.
