Beet Raspberry Energy Shot

Ingredients

  • 1 medium beetroot, peeled, sliced
  • 1 teaspoon extra virgin olive oil
  • 1 large carrot, chopped
  • 1 large Granny Smith apple, cored, sliced
  • 1 cup (123 g) raspberries, fresh or frozen
  • 1 cup coconut water

Instructions

  • Preheat oven to 400°F. Line a baking sheet with parchment paper.
  • Toss the beet slices with olive oil until lightly coated. Spread them out on the baking sheet in a single layer.
  • Roast for 25 to 30 minutes, or until tender and slightly caramelized. Let cool slightly.
  • Add the roasted beet, carrot, apple, raspberries to a blender.
  • Blend on high for 30 to 60 seconds, or until smooth.
  • Pour the mixture through a fine-mesh sieve into a large bowl, using a spoon to help push the juice through. (For an extra-smooth shot, use a cheesecloth instead.)
  • Stir the coconut water into the strained juice until fully combined.
  • Use a funnel to fill small glasses or shot bottles with the juice. Repeat until all juice is poured.
  • Seal the bottles or cover the glasses and place them in the refrigerator to chill before enjoying.
  • Shake or stir well before drinking, as natural separation will occur.
