- 1 package (8 ounces) cream cheese, room temperature
- 2 cups (280 g) rotisserie chicken, shredded, chopped
- 1 cup (113 g) mozzarella cheese, shredded
- 1 cup (113 g) sharp cheddar cheese, shredded
- ⅓ cup (84 g) buffalo sauce
- 1 sheet puff pastry, thawed according to package instructions
- 1 large egg, beaten
- ranch dressing, for drizzling
- extra buffalo sauce, for drizzling
- parsley, for garnish
Preheat oven to 400°F.* Line a large baking sheet with parchment paper. Set aside.
To a medium bowl, add cream cheese, chicken, mozzarella cheese, cheddar cheese, and buffalo sauce. Stir until combined. (This makes about 3 cups.) Set aside while you prepare the puff pastry.
On a lightly floured work surface, roll out the puff pastry into a 9×12-inch rectangle.
Evenly spread 2 cups of the buffalo chicken mixture over the pastry, leaving about a ½-inch border along one long edge.
Brush the ½-inch border of the puff pastry with some of the beaten egg to help seal the dough when rolling.
Starting from the opposite long edge, tightly roll the pastry into a log. Press to seal the edges.
Using a sharp knife, carefully slice the log into 12 equal-sized pieces. Brush the exposed edges of the pastry with the remaining beaten egg. Bake for 15-18 minutes.
Remove the roll-ups from the oven. Carefully top each with a spoonful of the remaining buffalo chicken mixture. Return to the oven to bake for 6-8 more minutes, or until the pastry is golden brown and the mixture is heated through.
Drizzle with buffalo sauce and ranch dressing. Garnish with parsley before serving.
