- 2 pounds Russet potatoes, cut into ½-inch to ¾-inch cubes (about 7 cups)
- 3 tablespoons extra virgin olive oil
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- 2 cups (226 g) sharp cheddar cheese, shredded
Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
To a large bowl, add cubed potatoes, olive oil, salt, and pepper. Toss the mixture until the potatoes are evenly coated. Spread the seasoned potatoes evenly onto the lined baking sheet.
Bake for 25 minutes. After 25 minutes, flip the potatoes and continue to bake for an additional 25-30 minutes, or until the potatoes are golden brown and crispy.
Sprinkle cheese evenly over the potatoes. Bake for an additional 5-10 minutes, or until the cheese is melted.
Remove the potatoes from the oven and garnish with chopped parsley if you'd like.
Serve immediately.
