Cheesy Roasted Potatoes

Ingredients

  • 2 pounds Russet potatoes, cut into ½-inch to ¾-inch cubes (about 7 cups)
  • 3 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 cups (226 g) sharp cheddar cheese, shredded

Instructions

  • Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  • To a large bowl, add cubed potatoes, olive oil, salt, and pepper. Toss the mixture until the potatoes are evenly coated. Spread the seasoned potatoes evenly onto the lined baking sheet.
  • Bake for 25 minutes. After 25 minutes, flip the potatoes and continue to bake for an additional 25-30 minutes, or until the potatoes are golden brown and crispy.
  • Sprinkle cheese evenly over the potatoes. Bake for an additional 5-10 minutes, or until the cheese is melted.
  • Remove the potatoes from the oven and garnish with chopped parsley if you'd like.
  • Serve immediately.
