- 1 package (20 to 24 ounces) refrigerated cheese tortellini
- 1 can (15 ounces) black beans, drained, rinsed
- 1 can (15 ounces) corn kernels, drained (or 1 ½ cups fresh or frozen corn)
- 1 cup cherry tomatoes, halved
- 1 orange bell pepper, diced
- 1 yellow bell pepper, diced
- ½ medium red onion, finely diced
- 1 medium jalapeño, seeded, finely diced (adjust to taste)
- ⅓ cup fresh cilantro, chopped
- 1 to 1 ½ cups Italian vinaigrette, plus more to taste
- Salt and black pepper to taste
Cook the tortellini according to package directions until al dente. Drain and rinse under cold water to cool. Set aside.
In a very large bowl, combine the cooled tortellini, black beans, corn, cherry tomatoes, bell peppers, red onion, jalapeño, and cilantro.
Pour 1 cup of Italian vinaigrette over the salad and toss gently until everything is evenly coated. Add more dressing if desired.
Taste and season with salt and black pepper as needed.
Cover and refrigerate for at least 1 hour before serving to allow the flavors to come together. Stir gently before serving.
