Cowboy Caviar Tortellini Salad

Ingredients

  • 1 package (20 to 24 ounces) refrigerated cheese tortellini
  • 1 can (15 ounces) black beans, drained, rinsed
  • 1 can (15 ounces) corn kernels, drained (or 1 ½ cups fresh or frozen corn)
  • 1 cup cherry tomatoes, halved
  • 1 orange bell pepper, diced
  • 1 yellow bell pepper, diced
  • ½ medium red onion, finely diced
  • 1 medium jalapeño, seeded, finely diced (adjust to taste)
  • cup fresh cilantro, chopped
  • 1 to 1 ½ cups Italian vinaigrette, plus more to taste
  • Salt and black pepper to taste

Instructions

  • Cook the tortellini according to package directions until al dente. Drain and rinse under cold water to cool. Set aside.
  • In a very large bowl, combine the cooled tortellini, black beans, corn, cherry tomatoes, bell peppers, red onion, jalapeño, and cilantro.
  • Pour 1 cup of Italian vinaigrette over the salad and toss gently until everything is evenly coated. Add more dressing if desired.
  • Taste and season with salt and black pepper as needed.
  • Cover and refrigerate for at least 1 hour before serving to allow the flavors to come together. Stir gently before serving.
