Creamy White Bean Chicken Chili

Ingredients

  • 2 tablespoons olive oil, or vegetable oil
  • 1 medium yellow onion, diced
  • 2 teaspoons garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon kosher salt, plus more to taste
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper, optional
  • 4 cups (32 ounces) chicken broth
  • 2 cans (4 ounces each) diced green chiles
  • 2 cans (15 ounces each) Great Northern beans or cannellini beans, drained, rinsed
  • 1 can (15 ounces) sweet corn, drained
  • 1 can (14.5 ounces) fire-roasted diced tomatoes, drained
  • 1 medium jalapeño, seeded, diced, optional
  • 3 cups shredded rotisserie chicken, about 1 whole chicken
  • 1 package (8 ounces) cream cheese, softened, cut into cubes
  • 1 tablespoon lime juice

For Serving

  • Fresh cilantro, chopped
  • Shredded cheese
  • Sour cream, or Greek yogurt
  • Diced avocado
  • Sliced jalapeño
  • Crushed tortilla chips

Instructions

  • Heat the oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add the onion and cook for 5 to 7 minutes, or until softened.
  • Add the garlic, cumin, oregano, salt, pepper, and cayenne, if using. Cook for 1 minute, stirring constantly.
  • Pour in the chicken broth and green chiles. Bring the mixture to a simmer.
  • Add 1 can of beans to a bowl and mash with a fork or potato masher until mostly smooth. Stir the mashed beans and the remaining whole beans into the pot. The mashed beans help naturally thicken the chili and give it a creamy texture.
  • Add the corn, fire-roasted tomatoes, jalapeño, if using, and shredded chicken. Simmer for 10 to 15 minutes, allowing the flavors to come together.
  • Reduce the heat to low. Add the cream cheese and stir until completely melted and the chili is creamy and smooth, about 3 to 5 minutes.
  • Remove from the heat and stir in the lime juice.
  • Serve hot with fresh cilantro and your favorite toppings.
