Preheat the oven to 400°F. Spray a 9x13-inch baking dish with cooking spray.
To the baking dish, place one tortilla in each corner and one on each end (6 tortillas in all), overlapping each tortilla slightly to prevent any spaces.
Place a hash brown patty on top of each tortilla, followed by a piece of bacon. Then sprinkle the cooked sausage, scrambled eggs, and cheese evenly over the bacon.
Place another tortilla over the top, in the center.
Carefully fold the tortillas over the filling to completely enclose it.
Bake for 20-25 minutes, or until crispy. Garnish with green onions and tomatoes.
Serve warm.
