- 2 tablespoons olive oil, or vegetable oil
- 2 medium yellow onions, thinly sliced (about 3 to 4 cups)
- ½ cup (120 g) ketchup
- ¼ cup (50 g) light brown sugar, packed
- ¼ cup distilled white vinegar
- 1 cup water
- 1 teaspoon chili powder
- ½ teaspoon kosher salt
- ¼ teaspoon crushed red pepper flakes, optional
In a medium saucepan over medium heat, add the oil. Once warm, add the sliced onions. Cook for 6 to 8 minutes, stirring occasionally, until the onions are softened, but not browned.
Add the ketchup, brown sugar, vinegar, water, chili powder, salt, and red pepper flakes (if using). Stir until combined.
Bring the mixture to a boil, then reduce the heat to low. Simmer uncovered for 25 to 35 minutes, stirring occasionally, until the sauce has thickened and the onions are tender. The sauce will continue to thicken as it cools.
Taste and adjust the seasoning as needed. Let cool slightly before serving.
For a smoother sauce, pulse it a few times in a food processor. For the classic hot dog stand-style texture, leave it chunky.
