Preheat the oven to 425°F. Spray a large baking sheet with cooking spray.
Place one tortilla on a microwave-safe plate.
Evenly spread 1 cup of shredded cheddar cheese over the tortilla.
Top with a second tortilla.
Microwave on high for 30-45 seconds, or until the cheese is just melted.
Repeat the process with the remaining tortillas and cheese to make two large quesadillas.
Slice each quesadilla into 26 chip-sized triangles. To do this, cut the quesadilla into 4 equal triangles, and then cut each triangle into 8 smaller triangles. (images above in blog post)
Arrange the quesadilla triangles on the prepared baking sheet in an even layer.
Spray the triangles lightly with cooking spray.
Bake for 6 minutes. Then, carefully flip the chips and bake for an additional 6 minutes, or until crispy and golden brown.
While the chips are baking, prepare your desired nacho toppings.
Once the chips are baked and crispy, transfer them to a serving platter.
Top with your favorite nacho toppings. Serve immediately.
