Quesadilla Nachos

Ingredients

Optional Toppings

  • seasoned ground beef or chicken
  • cheddar cheese shredded
  • romaine lettuce shredded
  • jalapenos sliced
  • black olives sliced
  • sour cream
  • guacamole
  • pico de gallo
  • cilantro
  • limes

Instructions

  • Preheat the oven to 425°F. Spray a large baking sheet with cooking spray.
  • Place one tortilla on a microwave-safe plate.
  • Evenly spread 1 cup of shredded cheddar cheese over the tortilla.
  • Top with a second tortilla.
  • Microwave on high for 30-45 seconds, or until the cheese is just melted.
  • Repeat the process with the remaining tortillas and cheese to make two large quesadillas.
  • Slice each quesadilla into 26 chip-sized triangles. To do this, cut the quesadilla into 4 equal triangles, and then cut each triangle into 8 smaller triangles. (images above in blog post)
  • Arrange the quesadilla triangles on the prepared baking sheet in an even layer.
  • Spray the triangles lightly with cooking spray.
  • Bake for 6 minutes. Then, carefully flip the chips and bake for an additional 6 minutes, or until crispy and golden brown.
  • While the chips are baking, prepare your desired nacho toppings.
  • Once the chips are baked and crispy, transfer them to a serving platter.
  • Top with your favorite nacho toppings. Serve immediately.
