Sloppy Joe
- 1 pound ground beef
- ¼ cup chopped onion
- ½ teaspoon garlic powder
- 1 teaspoon yellow mustard
- ¾ cup ketchup
- 1 tablespoon brown sugar
- ½ cup water
- salt and pepper, to taste
Nachos
- 1 bag (9.25 ounces) Fritos Scoops corn chips
- 2 cups sharp cheddar cheese, shredded
- ¼ cup sour cream, optional for topping
- 2-3 green onions, diced (optional)
- 1 roma tomato, diced (optional)
- 1 medium jalapeno pepper, diced (optional)
Sloppy Joes
In a medium skillet over medium heat, cook the ground beef and onions until the beef is no longer pink. Drain.
Stir in the garlic powder, mustard, ketchup, brown sugar, and water, mixing until combined. Add salt and pepper, to taste.
Assembly
Place a thin layer of Fritos Scoops on a baking sheet. Top Fritos with sloppy joe mixture and cheese.
Place baking sheet in the broiler for 2-3 minutes, or until cheese is melted and bubbly.
Top with sour cream, onions, tomatoes, and jalapenos. Serve immediately.
