- 2 pounds boneless skinless chicken breasts
- ½ cup (127.5 g) low sodium soy sauce
- ½ cup (170 g) honey
- ¼ cup (64 g) hoisin sauce
- 1 tablespoon rice wine vinegar
- 2 teaspoons garlic, minced
- 1 teaspoon sesame oil
- ½ teaspoon ground ginger
- 3 green onions, thinly sliced
- 2 tablespoons water
- 1 tablespoon cornstarch
- 1 tablespoon sesame seeds
Place the chicken in the bowl of a slow cooker.
In a medium bowl, whisk together the soy sauce, honey, hoisin sauce, vinegar, garlic, oil, ginger, and most of the green onions (reserving a few for garnish). Pour over the chicken.
Cook on low for 3-4 hours (or high for 2-3 hours), or until the chicken reaches an internal temperature of 165°F. Cooking times may vary, depending on the size of the chicken breasts. Transfer the cooked chicken to a clean plate and tent loosely with aluminum foil. Let rest for 10 minutes.
Transfer the liquid from the slow cooker to a small saucepan.
In a small bowl, whisk 2 tablespoons of water with 1 tablespoon of cornstarch until smooth and creamy.
Slowly add the cornstarch mixture to the sauce. Cook on high until thick, whisking constantly.
Place the chicken back into the slow cooker. Pour the sauce over the chicken, tossing to coat.
Garnish with reserved green onions and sesame seeds. Serve warm.
