Dressing
- ¼ cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 ½ teaspoons Dijon mustard
- ½ teaspoon honey
- ¼ teaspoon garlic powder
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
Salad
- 6 cups (282 g) romaine lettuce, chopped
- 2 cups (280 g) rotisserie chicken, shredded, diced
- 1 medium Honeycrisp apple, diced
- ½ cup (80 g) red onion, diced
- ½ cup (87 g) pomegranate seeds
- ½ cup (65 g) dried cranberries
- ½ cup (56 g) candied pecans, roughly chopped (use store-bought or homemade)
- ½ cup (100 g) feta cheese, crumbled
In a small bowl or jar, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, garlic powder, kosher salt, and black pepper. Set aside to allow the flavors to develop.
To a large bowl, add romaine lettuce, chicken, apple, red onion, pomegranate seeds, dried cranberries, candied pecans, and feta cheese. Toss to combine.
Just before serving, drizzle the dressing over the salad. Toss gently to coat all the ingredients evenly.
