Cowboy Butter Roasted Corn Ingredients & Smart Substitutions

  • Corn: I used a very sharp knife to carefully cut the ears of corn into smaller sections. If you prefer, you can just cut or break the corn in half for larger pieces. It will still taste just as delicious!
  • Cowboy Butter: The star of the recipe (and many of my other recipes) is the cowboy butter. It is a homemade compound butter made with a blend of herbs and spices that gets a slight kick from cayenne pepper and red pepper flakes. You will use it for more than just this recipe, I can assure you!
  • Parsley: For a vibrant green color and a hint of freshness, I added parsley on top of the corn. If you don’t have any on hand, just skip it. The corn will still be flavorful and delicious!

Storing & Reheating Cowboy Butter Roasted Corn

To store cowboy butter corn, first, let it cool to room temperature. Next, wrap it tightly in plastic wrap or keep it in an airtight container. It will last up to 3-4 days in the refrigerator. Reheat it in the oven or air fryer. You can use the microwave to reheat the corn, but be careful not to overcook it and dry it out. But, there is always more cowboy butter you can brush on it!

Cowboy Butter Roasted Corn

Ingredients

  • 4 ears corn, husked and carefully cut into 1 ½-inch sections
  • 1 recipe cowboy butter, melted
  • parsley, chopped for garnish

Instructions

  • Preheat oven to 425°F.* Line a large baking sheet with aluminum foil, leaving enough room on the ends of the foil to create a packet.
  • Place the corn onto the lined baking sheet. Brush each section of corn with the melted cowboy butter, ensuring all sides are coated.
  • Wrap the corn in the aluminum foil, creating a large packet.
  • Bake for 25-30 minutes.
  • After baking, carefully open the aluminum foil. Broil the corn for 8-10 minutes, rotating halfway through, until golden brown.
  • Remove corn from the oven. Brush the remaining cowboy butter over each section. (Reheat butter if necessary.)
  • Garnish with chopped parsley and serve warm.

*Air Fryer Instructions:
  1. Brush sections of corn with the melted cowboy butter.
  2. Place the corn into the basket of the air fryer in a single layer. (Depending on the size of your air fryer, you may have to work in batches.)
  3. Air fry corn at 400°F for 10-12 minutes.
  4. Remove corn from air fryer. Brush with more melted cowboy butter. Garnish with parsley.
