One Pot Italian Sausage Tortellini Soup is a comforting and flavorful soup loaded with Italian sausage, tomatoes, cheese tortellini, and fresh spinach. And, it is as delicious as it is easy to make, coming together in less than 30 minutes! Top off each bowl with some shaved parmesan cheese for serving. Ingredients & Substitutions
Italian Sausage: I used mild Italian sausage in the soup. You could certainly substitute spicy Italian sausage, ground pork sausage, turkey sausage, ground chicken, or even ground beef, but it may change the flavor profile of the soup.
Tomatoes: This soup definitely has a tomato taste, which I love. Add a can of diced tomatoes (no need to drain) and tomato paste. For more of a kick, add a can of diced tomatoes with green chilis (or your favorite variety).
Chicken Broth: This soup has a both broth and cream base. You could substitute chicken stock for chicken broth, but the stock may give the soup a richer flavor.
Tortellini: I love cheese tortellini, but you could definitely use meat-filled (beef or pork) tortellini or vegetable tortellini like spinach and mushroom. If using frozen tortellini, you can add it to the pot in the final few minutes of cooking or boil it ahead of time.
Spinach: Use fresh or frozen spinach in the soup. If using fresh, you will need 2 cups. If substituting frozen spinach, use a 10-ounce bag, thawed and squeezed of excess liquid.
Crockpot Sausage Tortellini Soup
Yes, you can make this soup in a slow cooker, but you will have to brown the Italian sausage first. After that, let the crockpot do the rest of the work. To the bowl of your slow cooker, add the browned sausage. Next, add the onion, tomatoes, tomato paste, chicken broth, garlic, Italian seasoning, salt, pepper, and heavy cream. Cover and cook on low for 3-4 hours. After 3-4 hours, add the spinach and tortellini to the crockpot and cook for an additional 7-8 minutes. The tortellini should be cooked through and the spinach will be wilted.
How to Store Tortellini Soup
One Pot Italian Sausage Tortellini Soup can be stored in an airtight container in the refrigerator. It will last up to 3-4 days. Reheat the soup in a pot on the stovetop or in the microwave.
Freezing & Reheating Sausage Tortellini Soup
Soups are great to make ahead of time and store for a later date. (Keep in mind that pasta dishes and soups can sometimes have a change in texture and quality when frozen and thawed.) To freeze this soup, first, let it cool completely. Next, use a ladle to transfer the soup into freezer-safe plastic containers, leaving a little room at the top of each container for expansion. Seal the containers, label them, and store them in the freezer for up to 3 months. When ready to enjoy, let the soup thaw in the refrigerator for at least 8 hours. Then, heat it up on the stovetop or in the microwave.
One Pot Italian Sausage Tortellini Soup
Ingredients
- 1 pound ground mild Italian sausage
- ½ medium yellow onion, diced (approximately ½ cup)
- 1 can (28 ounces) diced tomatoes
- 2 tablespoons tomato paste
- 3 cups (720 g) chicken broth
- 2 teaspoons garlic, minced
- 2 teaspoons Italian seasoning
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 bag (20 ounces) fresh cheese tortellini, refrigerated
- 1 cup (238 g) heavy cream
- 2 cups fresh spinach
- parmesan cheese, shaved, for garnish
Instructions
- In a large heavy-bottomed pot over medium heat, add the Italian sausage. Cook, stirring occasionally and breaking up the meat as you go, for about 8-10 minutes, or until the meat is no longer pink. Drain excess grease if necessary.
- Add diced onions to the pot. Cook until they are translucent (about 3-5 minutes).
- Add the tomatoes, tomato paste, chicken broth, garlic, Italian seasoning, salt, and pepper. Stir to combine and bring to a simmer.
- Add tortellini, heavy cream, and spinach. Stir to combine.
- Allow the soup to simmer until the tortellini is tender and the spinach is wilted (about 8-10 minutes).
- Serve garnished with shaved parmesan.

Great tasting, easy-to-make soup. My store was out of Italian sausage, so I bought original & spiced it up & then proceeded from there. I think next time I will increase the broth & whipping cream (3:1 ratio) as it really gets absorbed by the pasta. A+ recipe, thanks for sharing.

I made the One Pot Tortellini Soup and it was delish! I like to play around with recipes so I went ahead and substituted a few things and doubled the recipe. Instead of the crockpot, I made on the stove. Came out just as great! Definitely a favorite in the house!
