Baked Broccoli Bites are broccoli florets that have been ground down in a food processor and mixed with eggs, cheese, flour, and garlic, all baked together and dipped in a homemade seasoned sour cream. Baked Broccoli Bites
Broccoli and cheese just go together, and this recipe supports that. Broccoli is considered a nutritional powerhouse, so the more you can get the health benefits of this vegetable, the better! It is an excellent source of vitamin C and full of antioxidants. Even your pickiest eaters will enjoy their veggies if served this way.
I love that they are vegetable-based, the kids love that they are crispy and tasty! You can make them as crispy as you would like, it just depends on how long you bake them.
Baked Broccoli Bites Recipe
There are two parts to this recipe–the broccoli bites and the seasoned sour cream dipping sauce.
Broccoli Bites Ingredients (full recipe below)
- Broccoli
- Eggs
- Shredded parmesan cheese
- Shredded cheddar cheese
- Garlic
- Flour
- Kosher salt
- Black pepper
Dipping Sauce Ingredients
- Sour cream
- Kosher salt
- Freshly ground black pepper
- Garlic salt
- Cayenne pepper
How to Make Baked Broccoli Bites
To make Baked Broccoli Bites, get out your food processor, and cut the broccoli into florets. (Or, you could buy the broccoli already cut). Wash the broccoli and pat it dry before adding the florets to the food processor. Process the broccoli florets until all the large pieces are gone. (If you don’t have a food processor, you could always use a blender.)
Next, add the eggs, parmesan cheese, cheddar cheese, flour, garlic, salt, and pepper. Mix all of these ingredients with a spoon. Scoop out one tablespoon of the broccoli mixture and place on a parchment-lined baking sheet. Use the bottom of a glass to flatten each scoop into a small patty. Bake for ten minutes at 425°F, flip them over and bake for ten additional minutes. While the broccoli bites are baking, make the seasoned sour cream dipping sauce.
How to Make the Dipping Sauce
This seasoned sour cream is SO GOOD on the baked broccoli bites. I loved the bites without it, but it just adds so much additional flavor when you dip them in the seasoned sour cream.
To make it, simply mix together the sour cream, salt, pepper, garlic, and cayenne pepper. If you are making this ahead of time, store it in the refrigerator until you are ready to use it.
How to Fry Broccoli Bites
For a crispier broccoli bite (and a little more unhealthy), you can fry these like a fritter. To fry them, heat about two tablespoons of olive oil in a large skillet over medium-low heat. Use your tablespoon scoop to add the batches of the broccoli batter to the skillet.
Flatten the batter into small patties, making sure to not overcrowd the pan. Cook for 2-3 minutes on each side, or until they are a nice golden brown. After the bites have been fried to a golden brown on both sides, remove them from the skillet and place on a paper towel-lined plate. Serve them when they are nice and hot and crispy!

Broccoli Bites
- 1 head (about 4 cups) broccoli, chopped into florets
- 2 large eggs, room temperature
- 1 cup Parmesan cheese, shredded
- 1 cup cheddar cheese, shredded
- 2 teaspoons garlic, minced
- 2 tablespoons all-purpose flour
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon black pepper
Dipping Sauce
- 1/2 cup sour cream
- 1/2 teaspoon Kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon garlic salt
- 1/8 teaspoon cayenne pepper
Instructions
- Preheat oven to 425°F
Broccoli Bites
- Add broccoli florets to a large food processor, process until all large pieces are gone.
- Add eggs, parmesan cheese, cheddar cheese, flour, garlic, salt, and pepper. Mix with a spoon.
- Scoop out 1 tablespoon and place on a parchment-lined baking sheet. Flatten each scoop with the bottom of a glass.
- Bake for 10 minutes and then flip the broccoli bites. Bake for another ten minutes. Serve warm with Dipping Sauce.
Dipping Sauce
- While the broccoli bites are baking, make the dipping sauce. In a medium bowl mix sour cream, salt, pepper, garlic, and cayenne pepper. Set in the fridge to chill while you finish cooking the broccoli bites.

I love your recipes! I maybe should have flattened them out more I expected them to be a bit crispy (baked mine). I just baked them a bit longer. Very yummy indeed!
