Honey Butter Skillet Corn is frozen corn cooked to perfection in a creamy mixture of butter, honey, and cream cheese, seasoned with salt and pepper. It is a sweet and savory upgrade to a side of corn and can be ready in just a few minutes! You will definitely want to add this to your Thanksgiving menu (do you know what day Thanksgiving is this year?) and Christmas menu! But, just like my homemade creamed corn, it can be enjoyed any time of the year, not just on holidays!
Ingredients & Smart Substitutions
- Butter: I like to use unsalted butter so I have control of the salt in the recipe. If using salted butter, you may want to lessen the amount of salt. (It’s easy to add more to taste if needed!)
- Honey: I love how the honey not only adds sweetness, but a lovely glaze onto the corn. If possible, use locally sourced honey.
- Corn: I used frozen corn in the recipe and simply added it to the skillet right from frozen–so easy! if corn is in season, you could use that, too. Just cut the kernels off of the cob and cook according to the instructions. Canned corn, drained, would also work just fine!
- Cream Cheese: Let the cream cheese soften a bit before adding it to the skillet. It adds a smooth texture and some creaminess to the corn. For a lighter option, try it with Greek yogurt instead of cream cheese.
- Salt and Pepper: Although I gave you suggested amounts of salt and pepper, you can certainly salt and pepper to taste.
Can I Add Other Vegetables to Honey Butter Skillet Corn?
Yes, you can definitely add other vegetables to this honey butter skillet corn! Here are a few I would try:
- Diced bell peppers (for a little sweetness and added color)
- Sauteed onions
- Finely diced or grated carrots
- Green beans
- Sauteed zucchini
Just make sure to cook the additional vegetables before adding them to the corn mixture to ensure they’re tender and flavorful. Adjust seasoning as needed to balance the flavors.
Storing & Reheating Honey Butter Skillet Corn
To Store: To store honey butter skillet corn, first, let the corn cool to room temperature. Next, store it in an airtight container in the refrigerator for up to 3-4 days.
To Reheat: Reheat the corn gently on the stove or microwave.
Can I Freeze Honey Butter Skillet Corn?
Freezing this honey butter skillet corn is not recommended, but you still can. (Freezing it might change the texture.) If freezing the corn, first, let it cool to room temperature. Next, store the corn in a freezer-safe container or bag–freeze it for up to a month or two. When ready to reheat, let the corn thaw in the refrigerator overnight.
