These Cheeseburger Twice-Baked Potatoes are the perfect mash-up (get it…mash-up?😜) of the two classic comfort foods. Each potato is filled with seasoned ground beef, creamy mashed potatoes, and sharp cheddar cheese, then baked until hot and melty. Ingredients & Substitutions

  • Potatoes: For the best results, use starchy potatoes like Russet or Idaho. They bake up fluffy and hold their shape well. Yukon Golds are a bit creamier, but still a good option. Just be sure to wash, pierce, oil, and salt the potatoes before baking. For the first bake, you can bake them in the oven, use my air fryer baked potato method, or cook them in the microwave for a quicker option.
  • Ground Beef: I used ground beef in the filling for that classic burger flavor. Ground turkey or ground chicken would also be delicious.
  • Classic Cheeseburger Blend: I added ketchup, yellow mustard, diced onions, hamburger seasoning, seasoned salt, and garlic powder to the ground beef. It’s a flavorful mix that gives the ground beef that familiar cheeseburger taste you love.
  • Heavy Cream: Heavy cream (also called heavy whipping cream) makes the mashed potatoes rich and creamy. You can use half-and-half or whole milk if you want a lighter texture.
  • Cheese: I added sharp cheddar cheese to the mashed potatoes, plus added more as a topping. After all, these are CHEESEburger twice-baked potatoes! You can also use your favorite kind of cheese or cheese blend.
  • Toppings: Don’t forget about the diced dill pickles and freshly diced tomatoes on top!

What To Do With Leftover Potato Tops

Don’t toss those leftover potato tops! My favorite way to enjoy them is easy. Brush with oil, sprinkle with salt and your favorite seasonings, then bake until crispy. Or dice them up and toss them into recipes like my Kielbasa Hash for extra flavor and crunch.

Make-Ahead Tips For Cheeseburger Twice-Baked Potatoes

It’s easy to prep parts of this recipe ahead so you can just assemble and bake when you’re ready to eat. Here’s how to get a head start:

  • Bake and prep the potatoes: Bake the potatoes and scoop out the insides up to 2 days ahead. Keep the potato shells and mashed potato flesh stored separately in the refrigerator.
  • Make the cheeseburger filling: Cook the ground beef with the onions and the rest of the cheeseburger blend ahead of time. Then, refrigerate in an airtight container for up to 2 days.
  • Mix the mashed potatoes: Combine the potato flesh with cream, butter, garlic powder, cheese, salt, and pepper up to 2 days before assembling. Store in the refrigerator until ready to use.
  • Assemble and bake: When ready, fill the potato shells with the mashed potatoes, top with the beef mixture and remaining cheese, then bake until hot and melty. Finish with tomatoes and diced dill pickles.

How To Store & Reheat Cheeseburger Twice-Baked Potatoes

To store cheeseburger twice-baked potatoes, first, allow them to cool completely. Then, wrap each potato tightly in plastic wrap or aluminum foil and place them in an airtight container or a sealed bag. Store them in the refrigerator for up to 3-4 days.

To Reheat: Preheat your oven to 350°F (175°C). Remove the wrapping, place the potatoes on a baking sheet, and bake for 15–20 minutes or until heated through. This method helps keep the potato skins crispy and the cheesy filling creamy. You can also microwave them for 2-3 minutes on medium power for a faster option, but I prefer the oven for a better texture.

Can I Freeze Cheeseburger Twice-Baked Potatoes?

Yes! After baking and cooling completely, wrap each potato tightly in plastic wrap and aluminum foil. Then freeze in an airtight container or bag for up to 2 months. When ready, thaw overnight in the refrigerator and reheat in a 350°F oven for 20–25 minutes until hot.

Ingredients

Baked Potatoes

  • 8 baking potatoes, washed
  • 3 tablespoons canola oil
  • 1 tablespoon kosher salt

Cheeseburger Filling

  • 2 pounds ground beef
  • ½ cup (80 g) yellow onion, finely diced
  • 1 cup (240 g) ketchup
  • 2 tablespoons yellow mustard
  • 2 tablespoons hamburger seasoning
  • 1 teaspoon seasoned salt
  • 1 teaspoon garlic powder

Mashed Potato Mixture

  • ½ cup (119 g) heavy whipping cream
  • ¼ cup (½ stick / 57 g) unsalted butter
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 cup (113 g) sharp cheddar cheese, shredded, divided

Toppings

  • ½ cup dill pickles, diced for garnish
  • tomatoes, diced for garnish

Instructions

Baked Potatoes

  • Preheat the oven to 400°F.
  • Scrub the potatoes thoroughly and pierce each several times with a fork.
  • Rub the potatoes with canola oil and sprinkle evenly with kosher salt.
  • Place the potatoes directly on the oven rack and bake for about 1 hour, or until they are fork-tender.
  • Remove from the oven and let them cool slightly.

Cheeseburger Filling

  • While the potatoes bake, heat a large skillet over medium heat. Add the ground beef and onions and cook, breaking up the beef with a wooden spoon, until the meat is fully browned and the onions are softened. Drain off any excess grease.
  • Stir in the ketchup, mustard, hamburger seasoning, seasoned salt, and garlic powder. Mix well and let it simmer over low heat for 3–4 minutes, until warmed through and well combined.
  • Remove from the heat and set aside.

Assembling & Baking Twice Baked Potatoes

  • Reduce the oven temperature to 350°F.
  • Use a knife to slice the tops off each potato lengthwise. Carefully scoop out the center of the potato and place it into a large mixing bowl, leaving a sturdy shell intact. Be very careful not to tear the potato skin.
  • Place the hollowed-out potato shells on a baking sheet.
  • To the bowl of potato flesh, add heavy whipping cream, butter, garlic powder, salt, pepper, and ½ cup of the shredded cheddar cheese. Mash everything together until smooth and creamy.
  • Spoon the mashed potato mixture evenly into the potato shells.
  • Top each one with about ½ cup of the cheeseburger filling.
  • Sprinkle the remaining ½ cup of shredded cheddar cheese evenly over the tops.
  • Return the stuffed potatoes to the oven and bake for 15–20 minutes, or until heated through and the cheese is melted. For a golden bubbly top, broil for an extra 1–2 minutes, watching carefully.
  • Garnish with the diced dill pickles and fresh tomatoes. Serve warm.
