Breakfast Bombs are buttermilk biscuits filled with cheese, scrambled eggs, and sausage, brushed with salted butter, and baked to a golden brown. It will be your new favorite way to start the day! Try my Biscuits and Gravy Bombs, too!
Sausage, Egg, and Cheese Breakfast Bombs
If you need a jumpstart to your day, look no further than this recipe (and maybe a giant Iced Sugar Cookie Latte). It starts with buttermilk biscuits, and then each is filled with the classic breakfast combination of sausage, eggs, and cheese. As the name implies, the Breakfast Bombs are bursting with flavor and energy to get you through the morning (or at least close…). Plus, they are easy to put together and can also be made in an air fryer!
Ingredients
Biscuits: Look for a tube of buttermilk biscuits, not the flaky variety. Or, if you have some extra time, you could make homemade buttermilk biscuits to use.
Cheese: I used shredded mild cheddar cheese, but almost any kind of cheese would be delicious!
Eggs: Scramble the eggs how you like them. I do have a scrambled egg recipe you could refer to; but, you may have a few extra after filling the bombs.
Sausage: Make sure the sausage links you choose are pre-cooked. Then, it’s just a matter of chopping the links and heating them up in the breakfast bombs.
Salted Butter: The salted butter can be optional, but it adds so much flavor. It is brushed on the tops of the bombs before and after they have been baked.
Can I Make Breakfast Bombs Ahead of Time?
Sure! If you want to get a head start on the next morning’s breakfast, get them assembled the night before. Then, place the bombs into the baking dish or oven-safe skillet, cover them, and store them in the refrigerator overnight. Bake them the next morning.
Variations to Breakfast Bombs
Although I think these are perfect as-is, they are also easy to make your own. Here are a couple of options and variations you can try:
- Leave out the sausage and make the bombs meatless.
- Use different meat like ham, bacon, or breakfast sausage.
- Add vegetables like bell peppers and onions to the bombs.
Air Fryer Breakfast Bombs
As I stated above, Breakfast Bombs can also be made in an air fryer. First, preheat the air fryer for about 5 minutes at 330°F. (Preheating the air fryer helps the biscuits cook completely). Then, instead of placing the assembled bombs into the skillet, place a few bombs into the basket of your air fryer. You will probably have to work in batches, depending on the size of your air fryer.
After placing the bombs into the air fryer (don’t forget about the salted butter), air fry for 8 minutes. After eight minutes, carefully pull apart the bombs if they are connected to one another. Air fry for another 2 minutes, or until golden brown. Brush with the remaining salted butter and enjoy!
Can I Freeze Breakfast Bombs?
Sure! Once the bombs have been baked and cooled, you could definitely store them in the freezer. Wrap them in plastic wrap and in a freezer-safe bag or container. Having a breakfast bomb at your fingertips will save you some stress on those hectic mornings when you need to get out the door or just get your day started. Grab a frozen bomb and heat it up in the microwave.
Breakfast Bombs
Ingredients
- 1 can (8-count) Southern Homestyle Buttermilk Biscuits, not flaky
- 1½ cups (169.5 g) mild cheddar cheese, shredded, divided
- 1 cup scrambled eggs, prepared to your liking (roughly 4-5 eggs depending on size), divided
- 8 precooked sausage links, chopped (about 1 cup), divided
- ¼ cup (½ stick / 57 g) unsalted butter, melted
- 1 teaspoon kosher salt
- fresh parsley, chopped, for garnish
Instructions
- Preheat the oven to 375°F. Spray a 12-inch oven-safe skillet with nonstick cooking spray. Set aside. (If you have not made the scrambled eggs yet, now would be a good time.)
- Remove the biscuits from the can and place them on a clean work surface. Using a rolling pin, flatten each biscuit to about ⅛-inch thickness.
- Top each flattened biscuit with an equal amount of the shredded cheese leaving room around the rim of the circle. Then add an equal amount of scrambled eggs and chopped sausage on top of the cheese.
- Use your fingers to pull the sides of the biscuit and pinch to seal the edges together. Place the bomb (pinched side down) into the prepared skillet. Repeat with the remaining biscuits.
- In a small bowl, whisk together the melted butter and salt. Brush half of the salted butter over the tops of the bombs.
- Bake 20-23 minutes, or until golden brown.
- Immediately brush with the remaining half of melted butter, garnish with parsley, and serve.

Outstanding recipe! My family loved it! Thank you!
Family favorite! They ask for breakfast bombs all the time now lol I’ll mix it up occasionally and fry up some potatoes to the mix.
Has anyone tried making these with scratch biscuits? They sure look delicious!
Why not the flaky kind of biscuits?
Scratch biscuits will work
Some of you people are rude to the author. She is giving you the recipe from the kindness of her heart.
It is not her fault if you don’t comprehend her instructions. Please be kind so she doesn’t quit posting.
Most of the time if you keep
reading you will find your answer.
Allow yourself more time than you think to assemble these. While they were super fun to make, it took me until about the 6th biscuit to get the hang of it 😉 The entire time however, my mind was full of ideas of all the possibilities with this! Ham and cheese, pizza, Mac and cheese with bbq pulled pork, the list goes on! Try these as you won’t be disappointed!
I trust you. If there is a wheat and corn allergy, what is the best flour for baking?
You are a marvelous, cook, splash, especially at your age
can you prepare night before and bake in morning?
This was a great recipe. Very surprised at how good they turned out. I used maple sausage and some onions and mushrooms for extra flavor. Very good!
can i put them on a baking sheet instead of in a skillet?
I used a baking/cookie sheet on the 2nd rack in the oven and baked mine for 22 mins. Turned out perfectly! They were so delicious! I did a double batch though (so 16 bombs) and used a pound of breakfast sausage that I crumbled.

If some of your readers would just “read” your directions, they would see that it makes 8 biscuit bombs & it said 1 – 8oz can.
Sounds pretty simple & I’m in my late 70’s
Keep coming with your delicious recipes!
I loved these! I did it with bacon and with sausage and both came out wonderful. I can’t wait to try the biscuits and gravy bombs next! 🤤
Hi- I was wondering if you had any insight as to how to make these with frozen yeast roll dough that you have to allow to rise before baking. (You don’t have to punch it down.) I get these from the frozen section of Kroger I would love to try this that way. Thanks!
Made these this morning! Your recipe was simple and precise. They were delicious!😋 Turned out just like your picture. Thank you!
U did a great job easy recipe .why do people have to put u down .the people that don’t understand are asking a question and u answered them .sorry people are so rude
I just made these. Excellent result. You do need to flour the board and rolling pin prior to rolling out the biscuits. I didn’t add onions or peppers but might do next time and it would enhance
the flavor. Love the receive. Thank you.
I think the recipe is very clear , and it looks delicious! I can’t wait to try it.
Oh good!! I know you’ll love it. 🙂
These are super easy to make and quick with whatever filling you want. Not sure why people are not understanding it’s 1 biscuit and pitching into a ball. Read & look at pics goes along way! Thank you for sharing this idea! Blessings 🙂
Thank you!
Can these be frozen and reheated?
I too would like to know if they freeze well… would love to pre-make them to take camping. Thank You
Sometimes I don’t answer every question in the comment section because it is already answered right in the blog post. All it takes is a little reading. 🙂

By precooked sausage links do you mean the frozen ones that can be cooked in a couple minutes?
It should say “precooked” on the package.
Hi Amanda! You have a very unsweetened response style. Where is the patience and grace in your response? Some of your recipe readers are trying to understand what you are saying so that they can make the perfect meal for their family, not to mention they could be a little older. It would benefit you greatly, and others, if you could respond more like unsalted butter. PS…Great recipe for a family especially with kiddos! Thank you! Be Blessed!
Hi Roz – I am always happy to help folks. When their question makes sense. No where does it say “add another biscuit on top”. It clearly states “Use your fingers to pull the sides together and pinch to seal. Roll into balls. Place the bomb (pinched side down) into the prepared skillet. Repeat with the remaining biscuits.” I do not know how I could make that more clear.
Not sure what you are talking about. Fold the edges together. Are you putting a second biscuit on top of the first?
Did you look at the pictures Don?
I too am confused about putting another biscuit on top. Pictures don’t explain anything!! A pleasant answer would be appreciated!
The directions aren’t confusing. The pictures SHOW how to execute the directions. I would love for you to understand. Hope that is pleasant enough for you.
Don and Shirley -YOU are basically going to wrap the eggs, cheese and sausage with the sides of the biscuits so that it makes a ball. I usually bring top and bottom together and then side to side so it’s closed up. Hope that helps.
Hello Don! Maybe I can help.
When you have the biscuit flat with the toppings on it you take the circle part (edges that don’t have toppings) and close it to make a ball and pinch them together to close mixer inside to make a ball.
My family has done this since can bicuts came out. We also like cheeseburger biscuits kids have always loved them. Can cut in half an add condements of your choice or dip them like fries.
