I love nachos and I love quesadillas and these Quesadilla Nachos are a fun twist on both, with cheese quesadillas cut into chip-sized triangles and baked until crispy and golden. Then, you can customize them with seasoned beef or chicken and all of your favorite nacho toppings! Quesadilla Nachos Ingredients & Substitutions

It’s all about the cheese quesadilla chips (which I could eat on their own)! Then, top the chips with your favorite toppings!

  • Tortillas: I used 10-inch flour tortillas, but you can use any size. If you are feeling motivated, make homemade flour tortillas. If using corn tortillas, you may have to adjust the baking time to get them crispy and golden without burning.
  • Cheese: I like mild cheddar cheese for the quesadillas because it melts well and has a mild flavor to go with all of the toppings. But, you can use your favorite kind of cheese or a blend of cheeses.

Best Toppings: Customize Your Quesadilla Nachos

There are an unlimited number of toppings you can add on top of your quesadilla nacho chips! That is part of the fun. (Well, besides eating them, of course.) Here are some ideas you can mix and match to create your perfect pile of quesadilla nachos:

  1. Shredded chicken
  2. Romaine lettuce
  3. Guacamole
  4. Pico de Gallo
  5. Sliced avocado
  6. Black beans
  7. Jalapeno hot sauce

Can I Make Cheese Quesadilla Chips In An Air Fryer?

No, it is not recommended to cook the cheese quesadilla chips in the air fryer. We did test this method, and the chips just flew around in there. So, we stuck to baking them in the oven.

How To Store Quesadilla Nachos

Although best served hot and fresh, you can store the quesadilla nachos for a few days. To store, separate the quesadilla chips from the toppings. This will keep the chips from getting soggy. Keep the chips in an airtight container in the refrigerator for up to 2 days. Place the toppings in separate containers. When ready to assemble the nachos, reheat the chips in the oven for 5-7 minutes, or until crispy and warm. Add your toppings and dig in!

Quesadilla Nachos

Satisfy your nacho cravings with Quesadilla Nachos. Crispy cheese quesadillas transformed into delicious nachos with your favorite toppings!

Ingredients

Optional Toppings

  • seasoned ground beef or chicken
  • cheddar cheese shredded
  • romaine lettuce shredded
  • jalapenos sliced
  • black olives sliced
  • sour cream
  • guacamole
  • pico de gallo
  • cilantro
  • limes

Instructions

  • Preheat the oven to 425°F. Spray a large baking sheet with cooking spray.
  • Place one tortilla on a microwave-safe plate.
  • Evenly spread 1 cup of shredded cheddar cheese over the tortilla.
  • Top with a second tortilla.
  • Microwave on high for 30-45 seconds, or until the cheese is just melted.
  • Repeat the process with the remaining tortillas and cheese to make two large quesadillas.
  • Slice each quesadilla into 26 chip-sized triangles. To do this, cut the quesadilla into 4 equal triangles, and then cut each triangle into 8 smaller triangles. (images above in blog post)
  • Arrange the quesadilla triangles on the prepared baking sheet in an even layer.
  • Spray the triangles lightly with cooking spray.
  • Bake for 6 minutes. Then, carefully flip the chips and bake for an additional 6 minutes, or until crispy and golden brown.
  • While the chips are baking, prepare your desired nacho toppings.
  • Once the chips are baked and crispy, transfer them to a serving platter.
  • Top with your favorite nacho toppings. Serve immediately.
