Sweet Corn Ravioli is cheese-filled ravioli with sauteed corn and garlic, tossed in a rich parmesan cream sauce. I like to sprinkle a little extra parmesan on my portion for added flavor (but it is delicious as-is, too)! It is an indulgent dish, but so simple to make and can be on the table in less than 30 minutes! Ingredients & Substitutions

  • Ravioli: I used refrigerated cheese ravioli, but you can certainly choose your favorite variety. I think spinach and ricotta ravioli, mushroom, or butternut squash ravioli would be great! Cook it according to package instructions.
  • Corn: If you have a couple of ears of corn, slice the kernels off to saute in the butter. Frozen or canned corn would also work. If using canned corn, drain and pat dry.
  • Parmesan Cheese: Freshly grated parmesan is always best when compared to the pre-grated variety. It has more flavor and melts better. Have a little extra on hand for garnish! If you don’t have parmesan, you could use pecorino romano or asiago.
  • Heavy Whipping Cream: Heavy whipping cream, also called heavy cream, adds creaminess and richness to the sauce. You could use half-and-half if that is what you have on hand.

Protein Add-Ins For Sweet Corn Ravioli

If you are looking to make the sweet corn ravioli more filling, there are plenty of options when it comes to adding protein. Here are some that I would suggest adding:

  1. Grilled chicken, shredded chicken, or rotisserie chicken
  2. Sauteed or grilled shrimp
  3. Crispy bacon or pancetta
  4. Cooked and crumbled Italian sausage
  5. Cooked ground meat like beef or turkey

How To Store Sweet Corn Ravioli

To store sweet corn ravioli, first, let it cool to room temperature. Next, store it in an airtight container in the refrigerator. It will last up to 3-4 days. Reheat it on the stovetop or in the microwave.

Can I Freeze Sweet Corn Ravioli?

Sure! To freeze the ravioli, first, let it cool completely. Next, store it in a freezer-safe container for up to 3 months. When ready to reheat, let it thaw in the refrigerator overnight. Keep in mind that the texture of the sauce may change a bit when frozen and thawed, but it will still be delicious!

Sweet Corn Ravioli

Treat yourself to the simplicity and deliciousness of Sweet Corn Ravioli. A cheese-filled delight with sautéed corn, garlic, and a Parmesan cream sauce!

Ingredients

  • 1 package (9 ounces) refrigerated cheese ravioli
  • 3 tablespoons unsalted butter
  • 2 ears corn, kernels sliced off the cob
  • 1 teaspoon garlic, minced
  • ¾ cup (75 g) parmesan cheese, finely grated, plus more for garnish
  • ¾ cup (178.5 g) heavy whipping cream
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • parsley, chopped for garnish

Instructions

  • Bring a large pot of salted water to a boil. Add the ravioli and cook according to package instructions (about 3-5 minutes). Reserve about ½ cup of the pasta water before draining. Set the ravioli aside.
  • In a medium, nonstick skillet over medium heat, melt butter. Add the corn kernels and cook for 4-5 minutes, or until the corn is tender and lightly golden. Add the garlic and cook for 1 more minute.
  • Reduce heat to low. Stir in the parmesan, heavy cream, salt, and pepper. Mix until the parmesan is fully melted.
  • Add the cooked ravioli to the pan. Toss gently to coat in the sauce. If the sauce becomes too thick, gradually stir in small amounts of the reserved pasta water until you reach your desired consistency.
  • Serve immediately, garnished with parmesan and parsley.
