What Is A Galette?

Galettes are French pastries that are like pies or tarts but with a free-form, rustic shape. You don’t need any special tools or pans to make one, and they’re easy for anyone to make! (Try it–I know you will love the simplicity.) While galettes are usually made with fruit, like my Blueberry Galette Dessert, I’ve also made (and loved) savory galettes like this one. This Caprese Galette uses fresh tomatoes, mozzarella, and basil for a simple and tasty dish.

Ingredients & Substitutions

  • Crust: I encourage you to make this galette with my homemade pie crust—a no-fail recipe made with shortening! (I also have an All Butter Pie Crust if preferred.) The recipe makes enough dough for two pie crusts, but you’ll only need one for this Caprese galette. Once you see how easy it is to make a galette, use the other pie crust for my Apple Galette—just as rustic, but sweet! If you are short on time, a store-bought pie crust would work, too.
  • Tomatoes: I like using Roma tomatoes because they are sweet, juicy, and firm, but you can use any tomatoes you have on hand.
  • Mozzarella: Fresh mozzarella is best for this Caprese galette. Did you know you can make homemade mozzarella? You can, and I have a recipe you could easily follow! In a pinch, you could use shredded mozzarella. Or, try the galette with burrata, ricotta, or goat cheese.
  • Basil: Basil adds a burst of fresh flavor and a vibrant green color! If you don’t have basil, you could try oregano or thyme.
  • Creamy Egg Mixture: The egg mixture is made by mixing eggs, heavy cream, salt, and pepper. It’s brushed on the edges of the dough to give the crust a golden color when baked and poured over the filling to make it creamy and hold everything together. If you prefer, you can use a regular egg wash (just a beaten egg) without the cream, which will still give the crust a nice golden color.

Can I Make This Caprese Galette Ahead Of Time?

Yes, you can get the Caprese galette made up to a few hours in advance so it is ready to pop in the oven when you are ready for it! Assemble the galette (but don’t bake it) and refrigerate it, covered with plastic wrap, for up to a few hours before baking. When ready to bake, take it out of the refrigerator and let it come to room temperature for about 15-20 minutes before baking.

Can I Add Protein To A Caprese Galette?

Absolutely! You can add cooked chicken (like shredded rotisserie chicken), bacon, or even prosciutto to make it heartier. Adding chicken would make it just like a Chicken Caprese Salad, but in a galette form! Whatever you decide to add, be sure to balance the flavors so it stays fresh and delicious!

How To Store Leftover Caprese Galette

To store leftover Caprese Galette, first, let it cool to room temperature. Then, wrap it tightly in plastic wrap or place it in an airtight container. Keep it in the refrigerator for up to 2-3 days. Reheat in the oven at 350°F for 10-15 minutes to restore crispiness.

Add a rustic touch to your meal with a Caprese Galette. This amazing savory pastry is filled with tomatoes, mozzarella, basil, and a creamy egg mixture!

Ingredients

  • 1 recipe homemade pie crust, use half
  • 2 Roma tomatoes, sliced into 12 thin slices (about ¼-inch each)
  • 8 ounces fresh mozzarella, sliced
  • ½ cup (12 g) fresh basil leaves
  • 2 large eggs, room temperature
  • ¼ cup (59.5 g) heavy whipping cream
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out the homemade pie dough into about a 14-inch circle. Carefully transfer the dough to the lined baking sheet.
  • Starting in the center of the dough, arrange the sliced tomatoes, mozzarella, and basil in overlapping circles, leaving 2-3 inches of dough exposed around the edges.
  • Fold the edges of the dough over the filling to create a rustic, pleated crust.
  • In a medium bowl, whisk together the eggs, heavy whipping cream, salt, and pepper until smooth.
  • Brush the exposed edges of the dough with the egg mixture. Pour the rest evenly over the tops of the tomatoes, mozzarella, and basil.
  • Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbly, but set.
  • Remove the galette from the oven and let it cool for about 5 minutes.
  • Slice and serve warm.
