Cheeseburger Bombs pack all the flavors of a classic cheeseburger into soft, buttery biscuits, topped with garlic butter and sesame seeds, then baked to perfection. I love serving these fun-to-eat, hand-held biscuits with fry sauce for dipping, but feel free to use any of your favorite sauces! Ingredients & Substitutions
- Ground Beef: The ground beef in these bombs gives them a hearty, meaty filling, just like a regular cheeseburger. The beef is seasoned with hamburger seasoning, seasoned salt, and black pepper. If you would like to try a substitution, you could use ground turkey or chicken as a leaner option.
- Pickles: I like the tangy crunch in my cheeseburger from dill pickles. But, if you don’t care for pickles, simply leave them out! Or, try adding finely diced bell peppers or a little relish for added flavor.
- Cheese: These are cheeseburger bombs, so I can’t leave out the cheese! I prefer sharp cheddar for the stronger flavor. For a milder taste, you could use regular cheddar, mozzarella, or a blend of your favorite cheeses!
- Biscuits: Use a tube of buttermilk biscuit dough (not flaky) for this recipe. If you are up for it, you can try my homemade buttermilk biscuits recipe. Store-bought or homemade pizza dough would work too, but you might need to adjust the baking time a little.
- Garlic Butter: The simple garlic butter is made with melted unsalted butter and garlic powder. It adds extra flavor to the bombs, giving each bite a delicious, garlicky taste and helping them get golden and crispy on top when baked.
- Sesame Seeds: Sesame seeds are added for a little extra crunch and flavor. They also give the bombs a fun, slightly nutty taste and make them look more like a real cheeseburger bun. But, if you don’t have any sesame seeds, just leave them off–the cheeseburger bombs will still be delicious!
Can I Make Cheeseburger Bombs Ahead Of Time?
Yes, you can make cheeseburger bombs ahead of time! Prepare the filling and assemble the bombs, then store them in the refrigerator for up to a day or freeze them for up to 3 months. To freeze, place the assembled bombs on a baking sheet and freeze until solid. Then, transfer them to a freezer-safe, airtight container. When ready to bake, no need to thaw—simply brush with garlic butter, sprinkle on sesame seeds (if using), and bake as usual, adding a few extra minutes to the baking time if starting from frozen.
Can I Use A Different Pan?
Yes, you can make cheeseburger bombs even if you don’t have an oven-safe skillet. Simply use a baking sheet lined with parchment paper, leaving some space between each one for baking. Alternatively, you can arrange the cheeseburger bombs in a greased baking dish or pie tin.
What To Serve With Cheeseburger Bombs: Perfect Sides and Dips
Cheeseburger bombs pair well with a variety of sides and dips! Here are a few of my suggestions:
- Dipping Sauces: Fry sauce (I also have an easy fry sauce), ketchup, mustard, or ranch dressing would all be delicious. Other dips you could try are BBQ sauce, garlic aioli, or cheddar cheese sauce (yay for more cheese!).
- Sides: Air fryer french fries (save the oven for the cheeseburger bombs), crispy onion rings, a fresh salad, or pickle spears.
- Vegetables: Roasted vegetables like air fryer carrots or sweet potato fries, for a healthier option.
- Beverages: We can’t forget about the drink! Pair with a cold soda, lemonade, or even a milkshake (how about my homemade chocolate frosty?) for a fun meal.
Storing & Reheating Leftover Cheeseburger Bombs
To store leftover cheeseburger bombs, first, let them cool completely. Next, place them in an airtight container and keep them in the refrigerator for up to 3 days. To reheat, you can put them in the oven at 350°F (175°C) for about 10 minutes, or until they are warm (my preferred method). You can also heat them in the microwave for 20-30 seconds, but they might not stay as crispy.
Cheeseburger Bombs
Ingredients
- 1 pound ground beef
- 1 small yellow onion, finely diced
- 1 tablespoon hamburger seasoning
- 1 teaspoon seasoned salt
- 1 teaspoon black pepper
- ½ cup (71.5 g) finely diced dill pickle
- ½ cup (56.5 g) sharp cheddar cheese, shredded
- 1 can (8-count) refrigerated biscuits, not flaky
- ¼ cup (½ stick / 57 g) unsalted butter, melted
- ¼ teaspoon garlic powder
- 2 teaspoons sesame seeds
- fry sauce, for dipping
Instructions
- Preheat the oven to 375°F. Spray a 10-inch oven-safe skillet with nonstick cooking spray.
- In a medium nonstick skillet over medium heat, cook the ground beef and onion, breaking up the beef as it cooks. Once the beef starts to brown, add the hamburger seasoning, seasoned salt, and black pepper. Continue cooking until the beef is fully browned and no longer pink. Remove from heat. Drain any excess grease if necessary, and set aside.
- Remove the biscuits from the can and place them on a clean work surface. Using a rolling pin, flatten each biscuit into a 5-inch circle about ⅛-inch thick.
- Add 1 tablespoon of shredded cheddar cheese to the center of each flattened biscuit. Top with about ⅓ cup of the ground beef mixture and, if using, 1 tablespoon of diced pickles.
- Carefully pinch the edges of the biscuit together to seal the filling inside. Place the sealed biscuits, seam-side down, into the prepared oven-safe skillet, evenly spaced.
- In a small bowl, mix the melted butter with garlic powder. Brush the tops of the biscuits with the garlic butter. Then, sprinkle with sesame seeds.
- Bake for 23-25 minutes, or until the biscuits are golden brown.
- Let the cheeseburger bombs cool slightly before serving.
- Serve warm with fry sauce for dipping.

These are 'the bomb' when it comes to flavor (ha, ha). Seriously, I wasn't even hungry, but I went back for another one. They are great!

I love these cheeseburger bombs. The pickles added lots of flavor for me; I will be making these at home, maybe for the big football game coming up!
