Ingredients & Substitutions

  • Bacon: Use thick-cut bacon, diced. You can break it into pieces before or after cooking. Do not make it ahead of time, since you’ll use some of the bacon grease to cook the onions and pineapple. Turkey bacon works too if you prefer a leaner option.
  • Onion: One large yellow onion (about 1 ½ cups diced) works perfectly. You could also use two to three small onions if that’s what you have on hand.
  • Pineapple: Fresh pineapple gives the best texture and bright flavor. You’ll need about 3 cups, finely diced (roughly half a medium pineapple). Canned pineapple can work in a pinch; just drain and pat dry so the jam doesn’t get too watery.
  • Garlic: Minced garlic adds a savory kick. Fresh is best, but jarred minced garlic can be used in a pinch.
  • Brown Sugar: Light brown sugar gives sweetness and depth. You could swap for dark brown sugar for a richer flavor, or coconut sugar for a slightly different, less sweet note.
  • Apple Cider Vinegar: Adds a tangy balance to the sweet pineapple. White vinegar could work, but it will be a sharper flavor.
  • Maple Syrup: Use pure maple syrup for that warm, caramel-like sweetness. Honey could be substituted, though the flavor will be slightly different.
  • Chili Powder & Red Pepper Flakes (optional): These add a subtle heat to balance the sweetness. Adjust to taste or omit for a milder jam.
  • Kosher Salt: Enhances all the flavors. Regular table salt works, just reduce slightly.

Pineapple Bacon Jam

Prep Time 15 minutes
Cook Time 35 minutes
Total Time 50 minutes
Sweet, smoky, and a little bit tropical, this Pineapple Bacon Jam is a flavor-packed topping for toast, burgers, or roasted veggies. Crispy bacon, juicy pineapple, and a touch of spice make it irresistibly addictive!

Ingredients

  • 1 pound thick-cut bacon, diced
  • 1 large yellow onion, finely diced (about 1 ½ cups)
  • 3 cups (495 g) fresh pineapple, finely diced (about ½ of a medium pineapple)
  • 2 teaspoons garlic, minced
  • ½ cup (100 g) light brown sugar, packed
  • ¼ cup (60 g) apple cider vinegar
  • ¼ cup (79 g) maple syrup
  • 1 teaspoon chili powder
  • ¼ teaspoon kosher salt
  • ¼ teaspoon red pepper flakes, optional

Instructions

  • In a medium skillet over medium heat, cook the diced bacon until crispy, stirring occasionally. While the bacon is cooking, line a plate with paper towels.
  • Using a slotted spoon, transfer the cooked bacon to the lined plate. Leave about ¼ cup of bacon grease in the skillet and carefully discard the rest.
  • Reduce the heat to medium-low. Add the diced onion to the skillet and cook, stirring often, until softened and beginning to caramelize.
  • Add the finely diced pineapple to the skillet with the onion. Continue cooking, stirring frequently, until the pineapple releases its juices and begins to soften, about 10 minutes.
  • Stir in the garlic and cook for about 30 seconds.
  • Add the light brown sugar, apple cider vinegar, maple syrup, chili powder, kosher salt, and red pepper flakes (if using). Stir to combine.
  • Return the cooked bacon to the skillet and stir everything together.
  • Allow the mixture to simmer over low heat for 20 to 30 minutes, stirring occasionally, until thickened to a jam-like consistency. If the mixture seems too loose, continue cooking until most of the liquid has evaporated. The jam should be thick and glossy.
  • Let cool slightly before serving. Serve warm or refrigerate and gently reheat before using.
