Ingredients & Substitutions

  • Chicken thighs: Boneless, skinless chicken thighs stay juicy and tender while cooking and pair beautifully with the sweet and savory sauce. You can use boneless, skinless chicken breasts, but be careful not to overcook them.
  • Italian seasoning: Adds a simple blend of herbs that gives the chicken extra flavor. Try my homemade Italian seasoning!
  • Paprika, chili powder, kosher salt, and black pepper: These seasonings add warmth and a little depth to the chicken without overpowering the apple and shallot flavors.
  • Extra virgin olive oil: Used to cook the chicken and helps create a golden, flavorful crust.
  • Unsalted butter: Adds richness to the apple shallot sauce. Unsalted butter lets you control the amount of salt in the dish.
  • Shallots: Shallots become sweet and tender as they cook, adding a mild onion flavor that works perfectly with the apples. You can substitute a small yellow onion if needed.
  • Light brown sugar: Helps the shallots and apples caramelize while adding a little sweetness to balance the lemon.
  • Lemons: Fresh lemon juice brightens the sauce and keeps the dish from tasting too sweet. Freshly squeezed lemon gives the best flavor.
  • Honeycrisp apples: Honeycrisp apples are a great choice because they are sweet, crisp, and hold their shape when cooked. You can substitute another firm apple, such as Fuji, Pink Lady, or Granny Smith, for a slightly tart flavor.
  • Fresh thyme: Adds a fresh herbal flavor and makes a simple garnish that brings everything together. You can use a sprinkle of dried thyme if fresh thyme is not available.

FAQs

What kind of apples are best for Apple Shallot Chicken?

Firm apples that hold their shape while cooking work best for this recipe. Honeycrisp apples are a great choice because they are sweet, crisp, and do not get mushy. Fuji, Pink Lady, or Granny Smith apples are also good options.

Can I use chicken breasts instead of chicken thighs?

Yes, you can use chicken breasts if you prefer. Keep in mind that chicken breasts are leaner than thighs, so they can dry out more easily. Cook them just until they reach an internal temperature of 165°F.

Can I make Apple Shallot Chicken ahead of time?

Yes! You can prepare the chicken and apple shallot sauce ahead of time and gently reheat it when ready to serve. For the best texture, I recommend reheating it slowly so the chicken stays tender and the apples keep their shape.

Can I use a different fruit instead of apples?

Yes! Pears would be a delicious substitute because they have a similar sweetness and texture. Choose a firm pear that will hold up during cooking, such as a Bosc or Anjou pear.

What to Serve with Apple Shallot Chicken

Apple Shallot Chicken is delicious with simple sides that let the sweet and savory sauce shine. Choose sides that soak up the flavorful sauce and make this an easy, complete meal.

How to Store Apple Shallot Chicken

Store leftover Apple Shallot Chicken in an airtight container in the refrigerator for up to 3 days.

To reheat, warm the chicken and apple shallot sauce gently in a skillet over medium-low heat until heated through. You can also reheat individual portions in the microwave, but the skillet helps keep the chicken tender and the sauce smooth.

I do not recommend freezing this recipe because the texture of the cooked apples can change once thawed.

Ingredients

Chicken

  • 2 pounds boneless skinless chicken thighs
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon chili powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons extra virgin olive oil

Apples and Shallots

  • 1 tablespoon unsalted butter
  • 2 medium shallots, thinly sliced
  • ¼ cup (50 g) light brown sugar, packed
  • 3 tablespoons freshly squeezed lemon juice, from about 2 medium lemons
  • 2 large Honeycrisp apples, cored, sliced into ½-inch slices
  • Fresh thyme sprigs, for garnish
  • 1 medium lemon, sliced for garnish

Instructions

  • Pat the chicken thighs dry with paper towels. Season both sides evenly with Italian seasoning, paprika, chili powder, salt, and pepper.

  • In the same skillet, melt the butter. Add the sliced shallots and cook for 2 to 3 minutes, stirring occasionally, until softened and beginning to caramelize.
  • Add the brown sugar and lemon juice, scraping up any browned bits from the bottom of the skillet. Stir until the sugar melts and the sauce comes together.
  • Add the apple slices and cook for 5 to 6 minutes, flipping halfway through, until the apples are slightly softened and caramelized but still hold their shape.
  • Return the chicken to the skillet and turn to coat it in the apple shallot sauce.
  • Garnish with fresh thyme and lemon slices. Serve warm.
