Buffalo Ranch Chicken Skewers are cubes of chicken coated in seasoned buffalo sauce and then cooked to perfection in an air fryer. They can also be cooked in the oven or on a grill. Whether served as an appetizer or as the main course, they will be a favorite! These were inspired by my super popular (and mega viral!) Bang Bang Chicken Skewers!
Ingredients & Substitutions
Chicken: Cut boneless, skinless chicken breasts into 1-inch cubes. For the best results in cooking, try to make each piece about the same size. If preferred, you could also use chicken thighs. Adjust the cooking time as needed.
Buffalo Sauce: For the most flavor, make homemade buffalo sauce. That gives you control over the amount of heat or spice you like. Or, use your favorite store-bought brand of sauce.
Seasonings: Dry ranch seasoning mix, onion powder, garlic powder, salt, and pepper are added to the buffalo sauce for more depth of flavor.
Can I Marinate The Chicken In The Buffalo Sauce?
Sure! The chicken can be marinated in the seasoned buffalo sauce. Keep it in the refrigerator, covered, for up to 24 hours. Then, thread the chicken onto the skewers to cook.
What To Serve With Buffalo Ranch Chicken Skewers
There are many delicious ways to serve these chicken skewers, from appetizers to the main course. Here are some ideas for serving:
- Grilled Vegetables like asparagus or green beans
- Coleslaw

- Dipping sauces like ranch or blue cheese dressing
Wooden Skewers vs Metal Skewers
Chicken skewers can be made with either wooden or metal skewers, even in the air fryer. If using wooden skewers, soak them in water for at least 30 minutes to keep them from burning while cooking. (If they are too long for the basket of your air fryer, break them so they can fit.) For metal skewers, no need to soak them, but make sure they fit in the air fryer basket.
How To Store Buffalo Ranch Chicken Skewers
If you have any leftover chicken skewers, store them in an airtight container in the refrigerator for up to 3-4 days. Alternatively, you can remove the chicken from the skewers before storing it. Reheat them in the oven, microwave, or skillet. Store any leftover buffalo ranch sauce in an airtight container in the refrigerator. Brush it over the reheated chicken before serving.
Buffalo Ranch Chicken Skewers
Ingredients
- 8 wooden skewers, soaked in water for 30 minutes
- 2 large boneless, skinless chicken breasts, about 1 ½ pounds, cut into 1-inch cubes
- ½ cup buffalo sauce
- 1 tablespoon dry ranch seasoning mix
- 1 tablespoon vegetable oil
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- fresh parsley, chopped for garnish
Instructions
- In a large bowl, whisk together the buffalo sauce, ranch seasoning mix, oil, onion powder, garlic powder, salt, and pepper until well combined.
- Pour half of the sauce into a separate bowl. Set aside to use after the chicken has been cooked.
- To the large bowl with half of the sauce, add chicken. Toss to coat evenly.
- Working one skewer at a time, thread 4-5 chicken cubes onto the soaked wooden skewers, leaving a little space between each piece.
- Working in batches (3-4 skewers at a time, depending on the size of your air fryer), air fry* at 400°F for 11-12 minutes, flipping halfway, or until the chicken has reached an internal temperature of 165°F.
- Once the chicken skewers are cooked through, carefully remove them from the air fryer and place them on a serving platter.
- Drizzle or brush with the reserved buffalo ranch sauce. Garnish with parsley. Serve.

Notes
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Thread the coated chicken onto the skewers, then onto the lined baking sheet.
- Cook the chicken skewers for 20-25 minutes, flipping halfway through, or until the chicken reaches an internal temperature of 165°F.
- Remove from the oven. Brush with the reserved sauce. Garnish with parsley. Serve.
