Sloppy Joe Baked Potatoes 

This recipe starts with baked potatoes. And then it’s all about the homemade sloppy joe mixture that is piled high on the hollowed-out potatoes. Finally, cheese is melted on top, followed by sour cream and green onions. It is definitely filling enough to be the main course of a meal.

Sloppy Joe Baked Potato Ingredients

There are three parts to this recipe–the baked potatoes, sloppy joe mixture, and the toppings.

Baking Potatoes: The Russett potato is your best bet when baking potatoes. They are a starchy potato that will bake crispy on the outside and fluffy on the inside.

Kosher salt: With the larger grains, kosher salt is easier to pick up and sprinkle over food, in this case, your potatoes.

Sloppy Joes: This sloppy joe recipe uses ground beef. There is no need to buy a canned sloppy joe sauce once you see how easy this is to make. Using ingredients you probably already have on hand, it’s easy to whip this up! And, be sure to save it when you are serving sloppy joes on a bun!

Toppings: I prefer cheddar cheese, but you can choose your favorite kind of cheese to melt on top. Then, all you need is some sour cream and green onions when you are serving the potatoes.

Baked Potatoes

To bake the potatoes, preheat the oven to 400°F. I know how frustrating it is when you patiently wait for the potatoes to be done, and they turn out hard or crunchy. The first step is to pierce a few holes in each potato and coat each with canola oil. Then, sprinkle the salt over each potato.

Bake them for about an hour. A fork should easily pierce the baked potato when it’s done. If it is hard, bake it for a little longer. Be careful to not overbake, though! If you want to be exact, the temperature of a fully cooked potato is around 210°F. Set the potatoes aside to cool a bit before adding the sloppy joe mixture.

Sloppy Joe Mixture

This is a really simple, yet tasty sloppy joe recipe. So, be sure to save it when you want to serve it on a bun! Get started by cooking the ground beef with the chopped onion. After the beef has been browned (no pink), drain the beef. After draining the beef, add the garlic powder, mustard, ketchup, brown sugar, and water to the skillet. Add salt and pepper, to taste.

How to Make Sloppy Joe Baked Potatoes

After the potatoes have been baked and the sloppy joe mixture made, it’s time to assemble the delicious potatoes! First, cut off one top of each potato (horizontally speaking). Using a spoon, remove a little of the center of each potato and place it in a bowl. You should have a total of about half a cup of potato after removing a little bit from each potato.

Mash the potatoes that you put in the bowl. (On a side note, the salted skin of the potato that you just cut off the top is a salty delight, so don’t throw them away!)

Next, add the mashed potatoes to the sloppy joe mixture. Stir to mix it up. Then, top each potato with equal amounts of the sloppy joe mixture and shredded cheese. Broil the potatoes for 1-2 minutes, watching carefully, until the cheese has melted. Finally, serve topped with sour cream and green onions.

Ingredients

Baked Potatoes

  • 8 large russet potatoes
  • 1 tablespoon canola oil
  • 1 teaspoon kosher salt

Sloppy Joe Mixture

  • 1 pound ground beef
  • ¼ cup chopped onion
  • ½ teaspoon garlic powder
  • 1 teaspoon yellow mustard
  • ¾ cup ketchup
  • 1 tablespoon brown sugar
  • ½ cup water
  • salt and pepper, to taste

Toppings

  • 1 cup cheddar cheese, shredded and divided
  • ½ cup sour cream
  • 2-3 green onions, diced

Instructions

  • Preheat the oven to 400°F.

Baked Potatoes

  • Wash each potato and pierce a couple of holes on each side with a sharp knife or fork.
  • Coat each potato with canola oil and salt and bake for 1 hour. (Potatoes should be fork-tender when done.)
  • Set potatoes aside to cool slightly.

Sloppy Joe Mixture

  • In a medium skillet over medium heat, cook the ground beef and onions until the beef is no longer pink. Drain.
  • Stir in the garlic powder, mustard, ketchup, brown sugar, and water, mixing until combined. Add salt and pepper, to taste.

Assembly

  • Using a sharp knife, slice the top off of each potato.
  • Remove a scoop of potato out of each one and place it in a small bowl. (You will have a total of about ½ cup potato.)
  • Mash the scoops of potatoes and add them to the sloppy joe mixture. Mix to combine.
  • Top the baked potatoes with equal amounts of sloppy joe mixture and shredded cheese. Broil for 1-2 minutes, watching carefully, until the cheese is melted.
  • Served topped with sour cream and green onion.

  1. I make a baked stuffed potatoes recipe that the country club that I used to work for used. Making them, we cut the potato in half and hollowed out the skin. Then we mashed the potato meat and add cheddar cheese, sour cream, bacon and green onion. Then we would pipe the mash back into the skins of the potato. When baking them, a lot of melted butter would be brushed all over the potato. It’s fabulous. This is more of a potato skins recipe, which I do very well!
