Ingredients & Substitutions

  • Homemade mayonnaise: This is the creamy base of the sauce and gives it that rich, velvety texture. You can use any homemade mayo you like. Store-bought mayonnaise can also be used in a pinch, but homemade gives the best flavor and thickness.
  • Chipotle pepper in adobo: Adds smoky heat and deep flavor. You can use half a pepper for a milder sauce or an extra pepper for more heat. And then, get the most out of your can of peppers and make my Chipotle Honey Vinaigrette, too!
  • Adobo sauce: Brings extra smokiness and spice from the can. If you want a milder version, start with 1 teaspoon and add more to taste.
  • Fresh lime juice: Adds brightness and balances the richness of the mayo. Lemon juice can be used as a substitute.
  • Garlic: Fresh minced garlic adds a sharp, savory kick. For a smoother flavor, you can reduce the amount or use a small pinch of garlic powder instead.
  • Kosher salt: Enhances all the flavors and helps everything pop. Adjust to taste depending on your mayo base.
  • Honey: Adds a touch of sweetness to balance the heat and smokiness. Maple syrup can also be used.
  • Paprika: Adds warmth and color. Regular paprika works great, but smoked paprika can be used if you want an even deeper smoky flavor.

FAQs

How spicy is homemade Chipotle mayo?

It has a mild to medium heat, depending on how much chipotle pepper and adobo sauce you use. You can easily tone it down by starting with half a pepper or make it spicier by adding more.

Can I make Chipotle mayo with store-bought mayonnaise?

Yes. While homemade mayonnaise gives the best flavor and texture, store-bought mayo works well for a quick version. Just make sure it’s a good-quality, full-fat mayonnaise for the creamiest result.

How long does homemade Chipotle mayo last?

Store it in an airtight container in the refrigerator for up to 5 days. Stir before using if it separates slightly.

Can I make this sauce ahead of time?

Yes. In fact, it tastes even better after resting for at least 30 minutes in the fridge, giving the flavors time to develop.

Can I make it less smoky or tangy?

Yes. Reduce the adobo sauce for less smokiness, or add a little extra honey or mayo to mellow the overall flavor.

Ways to Use Chipotle Mayo

This Homemade Chipotle Mayo is one of those sauces that works on just about everything. It adds creamy heat, smoky flavor, and a little tangy-sweet balance that instantly upgrades simple meals.

  • Burgers and sandwiches: Spread it on burgers, chicken sandwiches, or wraps for a bold, flavorful upgrade.
  • Tacos and quesadillas: Drizzle it over tacos, breakfast burritos, or quesadillas for extra creaminess and heat.
  • Fries and roasted potatoes: Use it as a dip for French fries, sweet potato fries, or crispy roasted potatoes.
  • Bowls and grain bowls: Add a spoonful over rice bowls, chicken burrito bowls, or roasted veggie bowls.
  • Grilled meats and seafood: Serve alongside grilled chicken, steak, shrimp, or salmon as a dipping sauce or drizzle.
  • Vegetables and snacks: Great as a dip for fresh veggies (add it to your vegetable tray), crispy onion rings, or even as a spread for avocado toast.

How to Store Chipotle Mayo

Store homemade chipotle mayo in an airtight jar or container in the refrigerator for up to 5 days. Since it’s mayo-based, it should always be kept cold. The flavor actually improves after sitting for a bit, so it’s even better after a few hours or the next day, once the smoky chipotle, garlic, and lime have had time to blend. Give it a quick stir before using if it looks slightly separated after chilling.
