Garlic Cheese Bread is ciabatta bread generously spread with garlic butter made from roasted cloves, topped with both mozzarella and parmesan cheese. Ingredients & Substitutions
Garlic: Roasted garlic adds so much flavor to recipes, including the homemade garlic butter for this bread. It will make you want to roast garlic more often! You will need three heads of garlic, each with about 10-12 cloves. (If you are short on time, you can substitute the roasted garlic for about a tablespoon of minced garlic to make the butter.)
Butter: I used 2 sticks of salted butter, melted, for the garlic butter. It will soak into the bread and make the inside soft and the outside crispy, which is just how it should be!
Parmesan Cheese: Parmesan cheese is added to the garlic butter as well as to top the bread with the mozzarella.
Parsley: Fresh parsley is chopped for the garlic butter as well as for garnish.
Bread: Ciabatta bread is the perfect base for garlic cheese bread with an airy interior and crisp crust. Buy a loaf from the store or make it ahead of time. French bread like a French Baguette or another rustic loaf would also work, but you may have to adjust the baking time.
Mozzarella: Shredded mozzarella cheese provides a gooey and melty texture to the bread. It would be a tasty experiment to try other kinds of cheese, too! Or, combine a few of your favorites.
Can I Make The Roasted Garlic Butter Ahead Of Time?
Yes, making the roasted garlic butter in advance is a time-saving step! Roast the garlic and make the garlic butter as instructed. Once combined, store the butter in an airtight container in the refrigerator. It will last up to a week. When ready, let the butter come to room temperature so it is easy to spread over the bread.
How To Store Garlic Cheese Bread
Although best served fresh, you can save the leftovers to enjoy within the next day or two. Store the garlic cheese bread in an airtight container in the refrigerator for up to 2-3 days. When ready to enjoy, reheat them in the oven or air fryer.

Ingredients
Roasted Garlic
- 3 heads (10-12 cloves each) garlic
- 1 tablespoon extra virgin olive oil
Bread
- 1 cup (2 sticks / 227 g) salted butter, softened
- ½ cup (50 g) parmesan cheese, shredded, divided
- 2 tablespoons fresh parsley, finely chopped (plus more for garnish)
- 1 loaf ciabatta bread, cut in half horizontally
- 2 cups (226 g) mozzarella cheese, shredded, divided
- salt, to taste
- parsley, for garnish
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper. Set aside.
Roasted Garlic
- Set out a 10-inch square of aluminum foil.
- Peel away all the loose, papery, outer layers around the heads of garlic. Leave the head itself intact with all the cloves connected.
- Trim about ¼ inch off the tops of the heads of garlic, exposing the cloves inside.
- Place all garlic heads in the center of the square of aluminum foil.
- Drizzle with olive oil.
- Fold the sides of the aluminum foil up to the center and seal (creating a foil packet with the garlic inside). Bake for about 45-50 minutes, or until the garlic cloves are soft and deep golden brown.
- Remove the garlic from the oven and carefully open the sealed foil packet to allow the garlic to cool slightly. Set aside. Leave the oven set at 400°F as you prepare the bread.
Garlic Butter
- When the garlic is cool enough to touch, squeeze the cloves into a medium bowl. Discard the remaining skin.
- Mash with a fork until the garlic forms a paste.
- Add butter, ¼ cup of parmesan, and parsley. Stir until well combined.
Assembly
- Spread the garlic butter evenly over each cut side of the bread (about a heaping ½ cup garlic butter per half).
- Top each evenly with mozzarella cheese and the remaining parmesan.
- Bake* for 15-20 minutes, or until the cheese is hot and melted.
- Slice the bread into 12 portions (or your desired servings). Serve with parsley for garnish. Enjoy!

- Follow the instructions to the point of baking the bread in the oven.
- Place the bread into the basket of your air fryer, cutting them to fit.
- Air fry for 3-4 minutes at 350°F, or until the cheese is melted and golden brown.

On the garlic cheese bread please post the oven temperature as you only say to maintain the temperature but never do tell us the actual temperature anywhere. Thank you.
oven temp is 375… it says it right on the recipe.
It says 400.
