We’re talking just-add-water type of easy. And that’s what I have for you today. You start with one master mix, add some simple mix-ins, package them in charming jars and add a cute tag with simple directions.

Transport yourself to the tropics with these coconut pineapple cookies. Thick and chewy, with bite-sized pieces of sweet pineapple and shredded coconut, you won’t be able to stop at one! This summer, enjoy these gems at the beach, lake, or pond, add a little imagination, and be transported to paradise without the extra expense.

COCONUT PINEAPPLE COOKIES

Prep Time 10 minutes
Cook Time 17 minutes
Total Time 27 minutes

Ingredients

  • 2 cups master mix recipe below
  • 1 cup sweetened shredded coconut
  • 1/4 cup sugar
  • 1/4 cup diced dried pineapple

Instructions

  • Pre-heat oven to 350°F and line a baking sheet with parchment paper.
  • In a large bowl, whisk together all of the ingredients. Stir in 1/4 cup water.
  • Working with 2 tablespoons of dough at a time, roll into a ball and place on the prepared baking sheet 2- inches apart.
  • Bake for 15 to 17 minutes. Let cool completely on pan.

MASTER MIX RECIPE

Total Time 10 minutes
And that’s what I have for you today. You start with one master mix, add some simple mix-ins, package them in charming jars and add a cute tag with simple directions.

Ingredients

  • 9 cups all purpose our
  • 1 1/4 cups powdered whole eggs
  • 1 cup buttermilk powder
  • 1 1/2 cups vanilla pudding mix
  • 2 tablespoons baking soda
  • 1 tablespoon salt
  • 4 cups powdered butter
  • 3 1/2 cups sugar

Instructions

  • In a very large bowl, combine all the ingredients and whisk until thoroughly combined. Store in an air-tight container until ready to use.

    This recipe AND the Master mix look amazing! I am definitely going to need to try this out. It would be super simple to have this on hand when my granddaughter is over and wants to bake cookies.

  2. I don’t want these for gifts. I just want a regular normal recipe and NOT 9 cups of flour. Why even bother putting this recipe in with other. normal recipes!!!

  3. Is there any substitute for the butter, buttermilk, and pudding mix? For the lactose intolerant? This recipe is calling me, thanks in advance..
