Seriously, I have been using this method the past few times I have made fajitas, and it is a no-fail (and delicious) way to enjoy them! Customize Your Fajitas: Ingredients and Smart Substitutions

  • Chicken: I prefer boneless, skinless chicken, cut up into strips, for fajitas. You could also use boneless, skinless chicken thighs.
  • Vegetables: Red bell pepper, green bell pepper, and yellow onion are classic vegetables used in traditional fajitas. They add a colorful mix of flavors and textures. Feel free to customize the recipe by adding your favorite vegetables like mushrooms, zucchini, or cherry tomatoes. Just make sure to adjust the cooking time accordingly.
  • Fajita Seasoning: Homemade fajita seasoning is the way to go in this recipe! It is full of flavor and convenient, being already mixed!
  • Oil: Vegetable oil helps coat the chicken and vegetables, aiding in even cooking and allowing the fajita seasoning to stick to the ingredients. You can substitute with olive oil or another preferred oil if desired.

How To Serve Air Fryer Chicken Fajitas

To serve chicken fajitas, try these suggestions:

  1. Warm tortillas in the oven (wrapped in aluminum foil) or in a skillet on the stovetop. You can also warm up tortillas in the microwave. Flour tortillas or corn tortillas are both delicious!
  2. As a nacho! Pile the ingredients onto tortilla chips (just like my Beef Nachos) and top with some cheese.
  3. Prepare your fajita toppings. Here are a few of my favorites: guacamole, roasted salsa or pico de Gallo, sour cream, shredded cheese, lime wedges, chopped cilantro or parsley.
  4. To assemble, take a warm tortilla and add a portion of the chicken and vegetables. Top with your choice of condiments and toppings. Depending on your preference, you can fold the tortilla or roll it up like a burrito.
  5. Consider serving with a side dish, such as Mexican rice, refried beans, or a simple green salad to complement the fajitas.

Can I Make Chicken Fajitas Ahead Of Time?

Sure! You can cut the chicken into thin slices and store in an airtight container in the refrigerator. Use it within 1-2 days. The vegetables can be cut up and also stored in the refrigerator. They will last a bit longer, up to 3-5 days.

How To Store Air Fryer Chicken Fajitas

To store chicken fajitas (which are one of my favorite air fryer meals!) first, let the chicken and vegetables cool to room temperature. Next, transfer the chicken and vegetables to an airtight container. Then, store in the refrigerator for up to 3-4 days. Reheat in the microwave, oven, or a skillet on the stovetop. They can also be frozen for up to 2-3 months. If reheating from frozen, thaw in the refrigerator overnight first.

Air Fryer Chicken Fajitas are tender chicken strips, bell peppers, and onions, seasoned with fajita spices and cooked quickly in an air fryer. This might be your new favorite way to make fajitas! Seriously, I have been using this method the past few times I have made fajitas, and it is a no-fail (and delicious) way to enjoy them!

Ingredients

  • 2 boneless skinless chicken breasts, cut into thin strips
  • 1 red bell pepper, seeded, halved, thinly sliced
  • 1 green bell pepper seeded, halved, thinly sliced
  • 1 yellow onion, halved, thinly sliced into half-moons
  • 3 tablespoons fajita seasoning
  • 1 tablespoon vegetable oil

Instructions

  • Preheat the air fryer to 390°F.*
  • In a large bowl, combine the chicken, bell peppers, onions, fajitas seasoning, and oil. Toss to evenly coat.
  • Place everything in the basket of your air fryer. (Depending on the size of your air fryer, you may have to work in batches.) Air fry for 14-16 minutes or until the chicken has reached an internal temperature of 165°F, shaking the basket halfway through cooking.
  • Serve on tortillas with pico de gallo, cheese, sour cream, or more of your favorite fajita toppings.

*Oven Instructions:
  1. Preheat oven to 400°F and line a large baking sheet with parchment paper.
  2. Place chicken, peppers, and onions in a single layer on the prepared baking sheet.
  3. Evenly sprinkle the fajita seasoning and vegetable oil over the chicken and veggies. Toss to coat.
  4. Bake for 10 minutes. Then, stir the chicken and vegetables on the pan and bake for 5 more minutes.
  5. Broil on high for 2-3 minutes to crisp up the chicken and vegetables. The chicken is done when it reaches an internal temperature of 165°F.

    I made these on a whim. I saw that you shared the recipe on your facebook page and knew I had all the ingredients. Bonus – I didn’t have to turn on my oven. So I threw everything into the air fryer and folded some clothes and called the kids to dinner. they love this so much. I was shocked at how easy it was and how much flavor it had.
