Creamy Roasted Tomato Toast
There is no need for a toaster for this creamy roasted tomato toast. The French bread is toasted in the same skillet as you prepare the tomatoes. After the bread has been toasted, each slice is topped with a cream cheese mixture, the roasted tomatoes, balsamic vinegar, and basil.
Creamy Roasted Tomato Toast Ingredients
Bread: I used 2 loaves of French bread in this recipe. You could also use a French baguette for smaller, more bite-sized pieces of toast, like crostini.
Cream Cheese Mixture: The cheesy spread is made with cream cheese, parsley, parmesan cheese, and kosher salt.
Tomatoes: Cherry tomatoes, halved, worked best for roasting and topping the bread. You could also use grape tomatoes.
How to Make Creamy Roasted Tomato Toast
To get started with this appetizer, first, combine the ingredients for the cream cheese mixture. Set that aside as you roast the tomatoes and toast the bread.
To roast the tomatoes, first, heat the oil in a large skillet. Add the tomatoes, salt, and red pepper flakes. Cook the tomatoes for about 5 minutes, or until they start to shrivel. Add the garlic and cook for just a minute, or until fragrant, making sure the garlic doesn’t burn.
Remove the tomato mixture from the skillet and place it onto a plate. Tent the tomatoes with aluminum foil to keep them warm. (If you love roasted tomatoes, be sure to check out my Roasted Tomato Soup!)
To the same skillet as you pan-roasted the tomatoes, place the oil and salted bread cut side down. Gently press down on the bread to evenly cook each slice until browned. Remove the bread from the heat.
Once the bread has been toasted, top it with the cream cheese mixture and the roasted tomatoes. Then, divide the balsamic vinegar equally over the tops of the slices of bread. Finally, add basil for garnish and enjoy immediately.

Ingredients
Cream Cheese Mixture
- 8 ounces cream cheese
- 1 teaspoon parsley
- ¼ cup parmesan cheese, grated
- ½ teaspoon kosher salt
Pan-Roasted Tomatoes
- 1 tablespoon olive oil
- 2 packages (10 ounces each) cherry tomatoes, sliced in half lengthwise
- 1 teaspoon kosher salt
- 1 pinch red pepper flakes
- 2 cloves garlic, minced
Toasted French Bread
- 2 loaves (9 inches) French bread, cut half lengthwise and then into 4 to 5-inch sections
- 1 tablespoon olive oil
- ½ teaspoon kosher salt
- ¼ cup balsamic vinegar, for garnish
- basil, chopped for garnish
Instructions
Cream Cheese Mixture
- In a medium bowl combine cream cheese, parsley, parmesan, and salt. Set aside.
Roasted Tomatoes
- Heat the oil in a large skillet over medium heat.
- Once the oil is sizzling, add tomatoes, salt, and red pepper flakes.
- Continue cooking, stirring frequently, until tomatoes start to shrivel (about 5 minutes).
- Add garlic and cook 1 more minute (or until fragrant).
- Remove the tomato mixture from the skillet. Set aside and tent with aluminum foil to keep warm.
Toasted Bread
- Brush each piece of bread with olive oil and sprinkle each with salt.
- In the same skillet as you roasted the tomatoes, place the pieces of bread cut side down. Cook the bread until browned, pressing lightly into the pan to ensure even cooking.
- Remove the bread from the skillet. Top with the cream cheese mixture and roasted tomatoes.
- Drizzle balsamic vinegar equally over each slice of bread.
- Garnish with chopped basil. Serve immediately.
