Ingredients & Substitutions

Shrimp: Look for frozen uncooked shrimp that are already peeled, deveined, and tail removed. Then, let them thaw before using. If buying fresh shrimp, it’s your choice whether to devein them. Deveining is mainly for appearance, not for any other reason. To peel the shrimp, start from underneath and remove the tail. If you choose to devein, make a shallow slit along the back of the shrimp and pull out the black vein with the tip of a knife. It’s not as daunting as it sounds. So, if you can’t find pre-prepped frozen shrimp, don’t hesitate to use fresh ones. Just follow these simple steps! I do not recommend using pre-cooked shrimp.

Marinade: Let the shrimp sit in the refrigerator in a marinade made of cornstarch, water, soy sauce, chicken bouillon, granulated sugar, and baking soda for about 20-30 minutes. The marinade helps tenderize the shrimp and gives it flavor.

Vegetables: I added onion, carrots, and peas to the fried rice. Mix and match your favorite vegetables; just be aware that you may need to adjust cooking times so they are cooked to your level of doneness.

Eggs: Four large eggs will be beaten, and then cooked in the skillet.

Rice: This fried rice recipe is the perfect way to use up any leftover cooked rice! If you are not using leftover rice, be sure to allow enough time to cook the rice and let it cool completely before making this recipe. I used long-grain white rice, but you could certainly try using brown rice if preferred.

Do I Have To Use A Nonstick Skillet?

Yes, for the best results when cooking the shrimp, a nonstick skillet is important. When tested in other skillets, the shrimp did not get the expected char that I was going for. In addition, a nonstick skillet is helpful when cooking the eggs, too.

How To Store Shrimp Fried Rice

To store shrimp fried rice, first, let it cool completely. Next, store it in an airtight container in the refrigerator. It will last up to 3-4 days. I like to divide the fried rice into individual-sized portions for easy grab-and-go meals to heat up later! Reheat in a skillet on the stovetop or in a microwave.

Can I Freeze Fried Rice?

Absolutely! Fried rice, including this shrimp fried rice, freezes well. To freeze, first, let it cool completely. Next, store the fried rice in a freezer-safe container or bag. Label and date the containers; the fried rice will last up to 2-3 months. When ready to enjoy, let the frozen fried rice thaw in the refrigerator overnight. Reheat it in a skillet (with a little oil) on the stovetop. Or, heat it in the microwave.

Ingredients

Shrimp

  • 1 pound large shrimp, peeled, deveined, tails removed
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon soy sauce
  • 1 teaspoon chicken bouillon
  • 1 teaspoon granulated sugar
  • teaspoon baking soda
  • 2 tablespoons canola oil

Fried Rice

  • 3 tablespoons water
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon canola oil
  • 1 large white onion, finely diced (about 2-3 cups)
  • cup (43 g) diced carrots
  • 2 teaspoons garlic, minced
  • 4 large eggs, beaten
  • 4 cups (744 g) cooked long-grain white rice, cooled
  • cup (45 g) frozen peas
  • 1 teaspoon sesame oil
  • green onions, sliced for garnish

Instructions

Shrimp

  • In a large bowl, combine shrimp, cornstarch, water, soy sauce, chicken bouillon, sugar, and baking soda. Mix well and transfer to the refrigerator to marinate for 20-30 minutes.
  • To a large nonstick skillet* over high heat, add canola oil. Once hot, add the shrimp to the skillet. Spread the shrimp into an even layer and cook for 1-2 minutes on each side. Avoid overcooking to prevent a rubbery texture. Transfer the cooked shrimp to a bowl and tent it to keep warm.

Rice

  • In a small bowl, mix water, oyster sauce, soy sauce, salt, and pepper. Set aside.
  • To the same skillet over medium heat, add oil. Once hot, add onions and carrots. Cook for 3-4 minutes, or until softened. Add garlic and cook for 1 more minute.
  • Using a spatula, push the mixture over to one side of the skillet. In the empty space, add the beaten eggs and cook until large curds form and the eggs are mostly set but still slightly moist.
  • Add the cooked and cooled rice, using your spatula to break up any clumps.
  • Pour in the prepared sauce, peas, sesame oil, and shrimp. Toss to evenly coat. Continue to cook until everything is heated through.
  • Garnish with green onions and serve warm.
