Ingredients & Substitutions

  • Potatoes: Look for baby potatoes to use, then wash and cut them in half. If using larger potatoes like Russet, Yukon gold, or red potatoes, try to cut them as close to the same size as you can. Then, adjust the baking time as needed.
  • Parmesan Cheese: Freshly grated parmesan is best (as compared to the pre-cut variety). You will use half of it in the potato coating and reserve the other half for sprinkling over the freshly roasted potatoes.
  • Oil: I prefer using extra virgin olive oil for its flavor, quality, and high smoke point. Regular olive oil, canola oil, or vegetable oil would also work.

How To Store Garlic Parmesan Roasted Potatoes

To store these roasted potatoes, first, let them cool completely. Next, keep them in an airtight container in the refrigerator. They will last up to 3-4 days. For the best results (and to crisp up the potatoes again) reheat them in the oven. You can use the microwave, but that may make them softer (but still good)!

Can I Freeze Roasted Potatoes?

Yes, you can freeze these garlic parmesan roasted potatoes. First, let the potatoes cool completely. Next, place them into a single layer on a baking sheet and into the freezer for an hour or two. Once frozen, store the potatoes in an airtight freezer bag or container. Label and date the container; they will last up to 2-3 months. When ready, reheat the potatoes directly from frozen or let them thaw in the refrigerator before reheating.

Garlic Parmesan Roasted Potatoes

Try these delicious Garlic Parmesan Roasted Potatoes! Easy to make and packed with flavor, they make the perfect side dish for any meal.

Ingredients

  • 2 pounds baby potatoes, washed, halved lengthwise
  • 1 cup (100 g) parmesan cheese, finely grated, divided
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon garlic, minced
  • 1 teaspoon kosher salt
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • parsley, chopped, for garnish
  • salt and pepper, to taste

Instructions

  • Preheat oven to 400°F. Line a baking sheet with parchment paper. Set aside.
  • In a large bowl, combine ½ cup of parmesan, oil, garlic, salt, paprika, and pepper. Mix well.
  • Add the potatoes to the bowl with the oil mixture. Toss to evenly coat.
  • Transfer the coated potatoes to the lined baking sheet. Arrange them in a single layer, cut side down. Drizzle any remaining oil mixture over the tops of the potatoes.
  • Roast the potatoes for 40-45 minutes, flipping them halfway through roasting. The potatoes are done when golden brown, crispy on the outside, and fork-tender.
  • Remove the baking sheet from the oven. Sprinkle the remaining parmesan cheese over the hot potatoes.
  • Garnish with parsley. Serve.
