I love a good caprese recipe, especially when summer tomatoes are at their best. If you love my Chicken Caprese Salad, these Chicken Caprese Skewers are another easy way to enjoy those same fresh flavors.

Tender pieces of chicken, juicy tomatoes, mozzarella, basil, and a drizzle of homemade balsamic glaze all come together on a skewer. They are made in the air fryer for an easy dinner, but I also included grilling instructions for those days when you want to fire up the grill and enjoy cooking outside. They are also a great addition to your summer gatherings, cookouts, and Fourth of July menu.

Ingredients & Substitutions

  • Chicken: I use boneless skinless chicken breasts cut into cubes for these skewers, but boneless skinless chicken thighs can also be used. They will stay a little more tender and juicy while cooking.
  • Seasonings: Garlic salt and lemon pepper add simple flavor to the chicken without overpowering the fresh caprese toppings. You can adjust the seasoning to taste or use your favorite Italian-inspired seasoning blend.
  • Tomatoes: Grape or cherry tomatoes work best because they hold their shape well on the skewers. Choose ripe, flavorful tomatoes for the best results.
  • Fresh Mozzarella: I like serving these skewers with fresh mozzarella balls (ciliegine) on the side, but you can also add them to the skewers after cooking if you’d like. If you cannot find them, cut larger fresh mozzarella into bite-sized pieces.
  • Fresh Basil: Fresh basil gives these skewers that classic caprese flavor. Add it right before serving for the best flavor and freshness.
  • Balsamic Glaze: The homemade balsamic glaze adds a sweet and tangy finish. You can use a store-bought balsamic glaze to save time if preferred.

Tips for the Best Chicken Caprese Skewers

  1. Cut the chicken evenly. Try to cut the chicken into similar-sized pieces so everything cooks at the same rate.
  2. Do not overcrowd the air fryer. Arrange the skewers in a single layer and cook in batches if needed. This helps the chicken cook evenly and brown nicely.
  3. Add the mozzarella after cooking. Fresh mozzarella is soft and creamy, so adding it at the end keeps the caprese flavor and texture just right.
  4. Use a thermometer for the best results. Chicken is fully cooked when it reaches an internal temperature of 165°F. This helps keep the chicken tender without overcooking it.
  5. Soak wooden skewers first. If using wooden skewers, soak them in water before cooking to help prevent them from burning.

FAQs

Should I use wooden or metal skewers?

Either works! Wooden skewers are convenient and easy to find, but they need to be soaked in water for at least 1 hour before cooking so they do not burn. If your wooden skewers are too long for your air fryer basket, you can trim or break them to fit. Metal skewers are reusable and do not need any preparation, but they will get very hot, so use caution when handling them.

Can I make Chicken Caprese Skewers without skewers?

Yes! If you do not have skewers, you can cook the seasoned chicken and tomatoes directly in the air fryer basket or on the grill. Finish with mozzarella, basil, and balsamic glaze just like the skewers.

Can I make these Chicken Caprese Skewers ahead of time?

Yes. You can assemble the skewers a few hours ahead and keep them covered in the refrigerator until ready to cook. Wait to add the mozzarella, basil, and balsamic glaze until after cooking for the freshest flavor.

Can I use chicken thighs instead of chicken breasts?

Absolutely. Chicken thighs are a great option and will give you slightly juicier skewers. Just make sure the chicken reaches an internal temperature of 165°F before serving.

  • Corn on the cob: Sweet summer corn is a natural pairing for these skewers.
  • Salad: Serve with a simple side salad for a lighter dinner option.
  • Bread: Garlic breadsticks or crusty bread, like a French Baguette or Sourdough, is great for soaking up any extra balsamic glaze.

How to Store Chicken Caprese Skewers

Store leftover Chicken Caprese Skewers in an airtight container in the refrigerator for up to 3 days. For the best texture, keep the balsamic glaze, basil, and any extra mozzarella separate if possible and add them after reheating. To reheat, warm the chicken and tomatoes gently in the air fryer at 350°F for a few minutes or in the microwave until heated through. Add the mozzarella, basil, and balsamic glaze just before serving.

I do not recommend freezing these skewers because the fresh tomatoes and mozzarella can change texture once thawed.

Air Fryer Chicken Caprese Skewers are an easy summer dinner made with tender chicken, juicy tomatoes, fresh mozzarella, basil, and a homemade balsamic glaze. They come together quickly in the air fryer, with grilling instructions included for a fresh and flavorful meal everyone will enjoy.

Ingredients

  • Wooden or Metal Skewers

Balsamic Glaze

  • 1 cup (240 g) balsamic vinegar
  • ¼ cup (85 g) honey

Chicken Caprese Skewers

  • 2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
  • ½ teaspoon garlic salt
  • ½ teaspoon lemon pepper seasoning
  • 1 pound grape or cherry tomatoes
  • 8 ounces fresh mozzarella balls, ciliegine, drained, for serving
  • ¼ cup fresh basil, chopped, for garnish

Instructions

  • If using wooden skewers, soak them in water for at least 1 hour before assembling.
  • In a medium saucepan over medium-high heat, bring the balsamic vinegar to a boil. Reduce the heat slightly and simmer for 10 to 12 minutes, or until reduced by about half.
  • Remove from heat and stir in the honey. Set aside to cool.
  • Season the chicken cubes with garlic salt and lemon pepper seasoning.
  • Thread the chicken and tomatoes onto skewers, alternating between the chicken and tomatoes and leaving a little space at each end.
  • Place the skewers in the basket of an air fryer* in a single layer, working in batches if needed.
  • Air fry at 400°F for 11 to 12 minutes, flipping halfway through cooking, or until the chicken reaches an internal temperature of 165°F.
  • Remove the skewers from the air fryer. Serve with the fresh mozzarella balls, chopped basil, and a generous drizzle of balsamic glaze.
  • Serve immediately.

Notes

*Grilling Instructions:
  1. Preheat a grill to medium-high heat (about 425°F).
  2. Assemble the skewers as directed.
  3. Grill for 4 to 6 minutes per side, or until the chicken reaches an internal temperature of 165°F.
  4. Remove from the grill and finish with mozzarella, basil, and balsamic glaze before serving.
