Buffalo Chicken Cheesy Fries
There is just something about a plate of fries piled high that makes my mouth water. Instead of going out somewhere, make your own plate of fries loaded with the kick of buffalo chicken. You won’t find loaded fries like this many places! It’s easy to put together, and it’s a delicious late-night snack. It’s also a great appetizer to share. Ingredients
For this recipe, there are a few homemade options you can use in place of store-bought items.
Fries: I used a bag of regular-cut, frozen French fries in this recipe. I seasoned them after they had been baked. You could also use unseasoned frozen steak fries or make Roasted Potato Wedges for a heartier potato. My Air Fryer French Fries would also be a delicious option!
Chicken: Homemade rotisserie chicken or store-bought will work perfectly in this recipe. Or, use any leftover shredded chicken you may have.
Buffalo Sauce: Yes, I have a recipe for homemade buffalo sauce that you could easily make for this recipe. If using store-bought sauce, be sure to check the label for buffalo sauce (different than hot sauce).
Cheese Sauce: This is AMAZING. I used two different kinds of cheese in the sauce (sharp cheddar and mozzarella), as well as more buffalo sauce!
Toppings: The toppings are optional, so load up with as many as you prefer or have on hand! I added green onions, ranch dressing (or blue cheese), buffalo sauce, and bleu cheese crumbles. Serve with a side of celery, just like when enjoying buffalo chicken wings!
Can I Make this Ahead of Time?
There are a few parts to this recipe you can get made in advance. For one, you could get the buffalo sauce made and stored for up to a month. In addition, you can also get the chicken shredded and stored in the refrigerator for 3-4 days. And finally, the cheese sauce can be made, cooled completely, and stored in the refrigerator for up to 4 days. Simply reheat the cheese sauce on the stove when ready to assemble the fries.

Buffalo Chicken Cheesy Fries
Ingredients
Fries
- 1 bag (32 ounces) French fries, frozen, regular cut
- 2 teaspoons seasoned salt
- ½ teaspoon pepper
Chicken
- 2 cups (280 g) rotisserie chicken, shredded
- ¼ cup (68 g) buffalo sauce
Cheese Sauce
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup (245 g) whole milk, room temperature
- ¼ cup (68 g) buffalo sauce
- ½ teaspoon kosher salt
- ½ cup (56.5 g) sharp cheddar cheese, finely shredded
- ½ cup (56.5 g) mozzarella cheese, finely shredded
Toppings
- green onion, chopped
- ranch dressing, or blue cheese
- buffalo sauce
- bleu cheese crumbles
Instructions
Fries
- Preheat oven to 425°F.
- Place the fries in an even layer onto a large baking sheet. Bake for 50 minutes, or until golden brown and crispy. While the fries are cooking, prepare the chicken mixture and the cheese sauce.
Chicken
- In a large bowl, combine the chicken and buffalo sauce. Set aside.
Cheese Sauce
- In a medium saucepan over medium heat, melt the butter. Add the flour and whisk constantly for 1-2 minutes, or until slightly browned.
- Reduce the heat to low. Gradually pour in the milk, whisking constantly, for another 3-5 minutes, or until the mixture has thickened.
- Remove the saucepan from heat. Add the buffalo sauce, salt, and cheeses, stirring to melt.
Assembly
- Increase the oven temperature to the broil setting.
- Sprinkle the baked fries with seasoned salt and pepper, tossing to coat. Spread them back into an even layer. Top the fries with the chicken mixture. Broil for 1-3 minutes, or until the fries are crispy and the chicken is heated through.
- Remove from the oven and immediately drizzle with the cheese sauce. Serve immediately, garnished with toppings.
