When ready, just bake it as the recipe says, adding a few extra minutes since it’s starting cold. And don’t forget, you can make the bacon jam ahead of time, too! Just keep it in a sealed container in the refrigerator and warm it up before spreading it on top.
What’s the Secret to Making the Best Meatloaf?
The secret to a juicy, tender meatloaf (and I have made a few!) is using a mix of ground beef and ground pork. This combo adds great flavor and keeps the meatloaf moist. Adding breadcrumbs and beaten eggs helps hold it together, while onions and seasonings give it plenty of flavor. A very important tip is not to overmix the meat! Mix just until everything is combined. Overmixing can make your meatloaf dry or tough. And finally, after baking, let your meatloaf rest for 5 to 10 minutes before slicing. Bacon Jam Meatloaf
Ingredients
- 2 pounds ground beef
- 1 pound ground pork
- 2 large eggs, beaten
- 2 teaspoons kosher salt
- ½ teaspoon black pepper
- ½ cup (122.5 g) whole milk
- 1 teaspoon Worcestershire sauce
- ½ cup (54 g) fine dry breadcrumbs, plain
- 2 teaspoons garlic, minced
- ½ cup yellow onion, finely chopped
- 1 ½ cups bacon jam
Instructions
- Preheat the oven to 350°F. Spray a large loaf pan (6 ½ x 10 inches) with nonstick cooking spray. Set aside.
- In a large bowl, combine ground beef, ground pork, eggs, salt, and pepper. Mix until just combined.
- In a separate bowl, stir together the milk, Worcestershire sauce, breadcrumbs, garlic, and onion.
- Add the milk mixture to the meat mixture. Mix gently by hand or with a spatula until fully incorporated. Avoid overmixing.
- Shape the mixture into a loaf about 8–9 inches long and 4–5 inches wide, making sure it's evenly shaped for even cooking.
- Place the meatloaf in the prepared loaf pan. Bake for 40 minutes.
- After 40 minutes, remove the meatloaf from the oven and spread bacon jam evenly over the top.
- Return the meatloaf to the oven and continue baking for 15-20 more minutes, or until the internal temperature reaches 160°F.
- Let the meatloaf rest for 5–10 minutes before slicing and serving.
