Buffalo Chicken Egg Rolls are filled with a creamy filling of rotisserie chicken, cheddar cheese, mozzarella, buffalo sauce, and ranch seasoning. They are cooked crispy in an air fryer, but can also be fried in oil or baked in the oven. Serve them with ranch or blue cheese dressing for dipping. If you love buffalo wings, these could be a new favorite snack or appetizer!
Ingredients & Substitutions
Chicken: Rotisserie chicken is the base of the filling. And, since it is pre-cooked, it saves time, too! Or, use leftover cooked shredded chicken.
Buffalo Sauce: We can’t have buffalo chicken without buffalo sauce! For the most flavor, make homemade buffalo sauce; this allows you to control how spicy you want it! Or, use your favorite store-bought brand.
Cheese: I used both sharp cheddar and mozzarella cheese in the egg rolls. You could also experiment with different cheeses like Monterey Jack, Colby, Pepper Jack (for extra spice), or even Gouda.
Dry Ranch Seasoning Mix: If you make your own ranch seasoning mix, you will also have some to make homemade ranch dressing for dipping! Or, use a 1-ounce packet of seasoning mix for the filling.
Egg Roll Wrappers: Look for egg roll wrappers in the refrigerated section of the grocery store. You could use wonton wrappers, but they are usually thinner and smaller, meaning the cooking time would need to be adjusted. And, you will probably need more of them to hold all of the filling.
Can I Assemble Buffalo Chicken Egg Rolls Ahead Of Time?
Yes! If you are preparing for a party, or just want the egg rolls ready to go when you are, you can assemble them ahead of time. Here is how:
- Refrigeration: Once assembled, place the egg rolls on a baking sheet or tray in a single layer. Cover them with plastic wrap or place them in an airtight container. Then, store them in the refrigerator for up to 24 hours.
- Freeze For Longer Storage: If you need to store them for longer, you can freeze the assembled egg rolls. Lay them out on a baking sheet, making sure they’re not touching, and freeze until solid. Once frozen, transfer them to a freezer bag or airtight container. They can be stored for several weeks to a few months. When ready to air fry, no need to thaw the egg rolls first; just add a few extra minutes to the cooking time.
How To Store Buffalo Chicken Egg Rolls
Before storing the egg rolls, first, let them cool completely. Once cooled, place the egg rolls in an airtight container or wrap them tightly in aluminum foil or plastic wrap. Store them in the refrigerator. They should keep for 3 to 4 days.
Can I Freeze Cooked Egg Rolls?
Yes, you can freeze these egg rolls after they have been cooked. First, they must cool completely. Once cooled, wrap in plastic wrap. Then, store them in a freezer-safe bag or container for up to 2-3 months. Reheat them in the air fryer, oven, or in hot oil (no need to thaw).

Buffalo Chicken Egg Rolls
Ingredients
- 2 cups (280 g) rotisserie chicken, finely diced
- 4 ounces cream cheese, softened
- ¼ cup buffalo sauce, plus extra for serving
- 1 cup (113 g) sharp cheddar cheese, shredded
- 1 cup (113 g) mozzarella cheese, shredded
- 1 packet (1 ounce / 2 tablespoons) dry ranch seasoning mix
- 8 egg roll wrappers
- water, for assembly
- ranch dressing or blue cheese dressing, for serving
Instructions
- To a large bowl, add chicken, cream cheese, buffalo sauce, cheddar cheese, mozzarella cheese, and ranch seasoning. Stir to completely combine ingredients.
- Working with one wrapper at a time, place ⅓ cup of the chicken mixture onto the center of each wrapper.
- To roll, lightly wet the edges of the wrapper with water. Fold up the bottom corner of the wrapper to cover the filling. Then fold in the right and left corners to the center, pressing lightly to seal. Roll the wrapper tightly until the filling is completely enclosed and the edges are sealed.
- Set the air fryer to 400°F.*
- Place the egg rolls into the basket of your air fryer. (Depending on the size of your air fryer, you may have to work in batches.) Spray the tops of the egg rolls with nonstick cooking spray. Air fry the egg rolls for 3-4 minutes. Flip them over, spray again with cooking spray, and air fry for another 3-4 minutes, or until golden brown.
- Serve the egg rolls hot with ranch or blue cheese dressing for dipping and additional buffalo sauce if desired.

Notes
- In a deep pot, heat 2-3 inches of vegetable oil to 365°F.
- Working in batches of 3 or 4, fry egg rolls in the hot oil, turning occasionally, until golden brown and crispy, about 3 minutes.
- Remove from oil and drain on paper towels. Before frying each batch of egg rolls, check that the temperature of the oil is back to 365°F.
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Place the egg rolls onto the lined baking sheet. Spray the tops of the egg rolls with cooking spray (or brush the tops with oil).
- Bake for 15-20 minutes, or until golden brown and crispy.

Love the idea of this recipe, but mine never got crispy. Even after 10 minutes of additional cook time. The oil from the filling (I guess from the cheese) was coming through the wrappers.
My husband did enjoy them even though they didn’t turn out how i expected.
Hi Demi – how did you prepare them? In the air fryer? If you added an addition 10 minutes at 400°F in the air fryer, they would have been burnt to a crisp. Is there any chance the air fryer wasn’t heating up? Or that it was set at the default setting of 350°F?
