Air Fryer Cheeseburger Egg Rolls are egg roll wrappers filled with ground beef, onion, dill pickles, and cheddar cheese, dipped in a simple mayo-based sauce. Cheeseburger Egg Rolls
Do you remember the jingle from the McDonald’s Big Mac commercials? ‘Two all-beef patties, special sauce, lettuce, cheese, pickles, onions, on a sesame seed bun…’ Well, this recipe has ground beef, pickles, cheese, and special sauce, but in egg wrappers instead of on a bun! Each bite gives you all the flavors of that classic cheeseburger, but in an egg roll. I will also let you know how to bake these in the oven or fry them in oil if preferred!
Egg Rolls Ingredients
There are two parts to the recipe–the egg rolls and the dipping sauce.
Egg Roll Wrappers: Look for the wrappers in the refrigerated section of the grocery store. They are larger than wonton wrappers.
Pickles: I used dill pickles, but you could use your favorite kind of pickles.
Dipping Sauce: This sauce is an easy-to-make version of the ‘secret sauce’ on the burger. It is made with mayonnaise, ketchup, and mustard.
How to Make Cheeseburger Egg Rolls
It’s really easy to get these burger-like egg rolls made. The hardest part is probably wrapping them, but that is just a matter of folding and sealing the wrapper to keep all the ingredients tucked inside.
To get started, cook the ground beef with garlic powder, salt, and pepper. Cook the meat until no pink remains. Next, set out the egg roll wrappers onto a clean surface. Top each with hamburger, onion, pickles, and cheese. With a pastry brush or your finger, wet the edges of the wrapper with water.
To fold the egg roll, follow these steps: (You can see pictures of how I do this in my Southwest Egg Roll recipe)
- First, fold up the bottom corner to just over the filling mixture, pressing it down to seal.
- Second, fold in the right and left corners of the wrapper to the center, lightly pressing to seal. (You may need to add more water to the edges and corners to help the wrapper stay folded.) It should now look like an open envelope.
- Finally, fold down the top corner and tightly wrap up the filling inside the wrapper, lightly pressing down with your finger to seal.
After you have put together a few big mac egg rolls, place them in the basket of your air fryer. The size of your air fryer will determine how many batches you will need to cook. Spray the tops of the egg rolls with cooking spray and cook at 400°F for 3-4 minutes. After a few minutes flip them over, spray again with cooking spray, and cook an additional 3-4 minutes. Serve hot with a side of the dipping sauce.
To make the dipping sauce, simply combine the mayonnaise, mustard, and ketchup. These egg rolls can be enjoyed with or without the dipping sauce. Or, just dip them into some ketchup, mustard, or a little bit of both!
Can You Make Cheeseburger Egg Rolls in the Oven?
If you don’t have an air fryer yet, or you are using it for another appetizer like Air Fryer Pork Belly Bites, you can bake these in the oven. To bake them, follow the instructions up to placing the egg rolls in the air fryer. Instead, place the egg rolls on a baking sheet lined with parchment paper and bake for 18-20 minutes, flipping halfway through.
Please note: If you bake the egg rolls in the oven, they will not turn out as crispy as if air frying or frying in oil. The outside will be smooth and not as golden brown.
How to Fry Cheeseburger Egg Rolls in Oil
If you want to fry the egg rolls in oil, heat oil in a deep pan until it reaches a temperature of 365°F. Once the oil is hot, use tongs to carefully place the egg rolls into the oil. Fry for 2-3 minutes, flipping them occasionally throughout this time, or until golden brown. Remove the egg rolls and let them drain on a paper towel. Be sure to check the oil temperature before adding another batch; the temperature of the oil may have decreased.
Air Fryer Cheeseburger Egg Rolls
Air Fryer Cheeseburger Egg Rolls are egg roll wrappers filled with ground beef, onion, dill pickles, and cheddar cheese, dipped in a simple mayo-based sauce.
Ingredients
Egg Rolls
- 1 pound ground beef
- 1 teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 1 small yellow onion, finely chopped (about ½ cup)
- 2-3 large dill pickles, finely diced (about ½ cup)
- 1½ cups (169.5g) sharp cheddar cheese, shredded
- 1 package (16 ounces) egg roll wrappers (this recipe makes 10 eggrolls)
Dipping Sauce
- ¼ cup (58g) mayonnaise
- 2 teaspoons mustard
- 2 teaspoon ketchup
Instructions

In a medium skillet over medium heat, add ground beef, garlic powder, salt, and pepper. Cook, stirring occasionally, until no pink remains, about 8 to 10 minutes. Remove from heat and drain excess oil.

On a clean work surface, set out 10 egg roll wrappers.

Working one at a time, top each with ¼ cup hamburger mixture, 1 tablespoon diced onion, 1 tablespoon diced pickle, and 2 tablespoons cheddar cheese.

To roll, first, wet the edges of the egg roll lightly with water, and then fold up the bottom corner to just over the filling and roll once.

Second, fold in the right and left corners of the wrapper to the center, lightly pressing to seal. (You may need to add more water to the edges and corners to help the wrapper stay folded.) It should now look like an open envelope.

Continue rolling until the filling is fully wrapped inside of the egg roll. Press to seal the edges.

Set the air fryer to 400°F.

Place the egg rolls into the basket of your air fryer. (Depending on the size of your air fryer, you may have to work in batches.) Spray the tops of the egg rolls with nonstick cooking spray and air fry the egg rolls for 3-4 minutes. Flip them over, spray again with cooking spray, and air fry for another 3-4 minutes, or until golden brown.

While the egg rolls are cooking, add mayonnaise, mustard, and ketchup in a small bowl and mix until well combined.

Dip the egg rolls in the dipping sauce and enjoy!
Can you use the air fryer and then keep them warm in the oven while cooking the rest or will they get soft and not stay crispy?
