If you are a fan of buffalo chicken recipes, you will love these Buffalo Chicken Roll-Ups! They are an easy appetizer made with a puff pastry sheet filled and rolled up with creamy chicken, mozzarella, and cheddar, mixed with zesty buffalo sauce. Sliced into handheld appetizers, they are baked in the oven until golden brown. (You can also make them in an air fryer.) Everyone who tried one loved it! Ingredients & Substitutions

  • Puff Pastry: These buffalo chicken roll-ups use one sheet of puff pastry that you should thaw according to the package instructions. You can also make homemade puff pastry, which is in my Apple Turnover recipe. If you don’t have puff pastry, you can use a sheet of crescent roll dough or rolled-out pizza crust dough. Just keep in mind that you might need to change the baking time if you use different dough.
  • Cream Cheese: For easy mixing, let the cream cheese soften to room temperature before mixing it with the other filling ingredients.
  • Chicken: This is the perfect recipe for leftover rotisserie chicken (which is already cooked) or any leftover cooked chicken like my shredded chicken. Just chop it up into small enough pieces to go into the filling.
  • Cheese: I like the flavor combination of shredded mozzarella cheese and sharp cheddar cheese. But, you could use all of one kind if that is what you have on hand. Or, switch up the cheese and try using Monterey Jack, Pepper Jack, Gouda, or your favorite blend of cheeses.
  • Buffalo Sauce: I have a wonderful recipe for homemade buffalo sauce. Or, choose your favorite brand of sauce. Do not use hot sauce; that is different than buffalo wing sauce. Have some extra on hand for drizzling over the baked roll-ups! If you want more of a kick to each bite, add more buffalo sauce!
  • Ranch Dressing: There is always a debate about what dressing to use with buffalo chicken recipes. Some are on ‘team ranch dressing’ while others are on ‘team blue cheese dressing’. Whatever you choose, these roll-ups are delicious. They can even stand on their own without any added dressing.

Can I Assemble Buffalo Chicken Roll-Ups Ahead Of Time?

Yes, you can get the roll-ups assembled up to 24 hours in advance. After rolling up the buffalo mixture in the puff pastry, wrap it securely in plastic wrap. Then, keep it in the refrigerator until slicing and baking the next day. (Store the remaining buffalo chicken mixture in an airtight container in the refrigerator.) When ready to bake the roll-ups, let them rest at room temperature for 15-20 minutes as you preheat the oven. Then, bake as instructed.

Storing & Reheating Buffalo Chicken Roll-Ups

To store leftover buffalo chicken roll-ups (if you have any leftovers, that is…) first, let them cool completely. Next, store them in an airtight container in the refrigerator. They will last up to 3 days. Reheat the roll-ups in the oven or air fryer to restore some of the crispiness. I warmed one up in the microwave, and that worked just fine, too!

Can I Freeze Buffalo Chicken Roll-Ups?

Yes, you can freeze the buffalo chicken roll-ups either before or after baking them. Here is how:

Freezing Before Cooking: To freeze after the buffalo chicken mixture is rolled up in the puff pastry, but before slicing, wrap it tightly in plastic wrap. Then, store it in a freezer-safe container. It will last up to 2-3 months. When ready to slice and bake, let it thaw in the refrigerator overnight.

Freezing After Cooking: To freeze the roll-ups after they have been baked, first, let them cool completely. Next, store them in freezer-safe containers for up to 1-2 months. Before reheating, let them thaw in the refrigerator. Keep in mind that the texture of the puff pastry may change slightly after freezing and reheating.

Buffalo Chicken Roll Ups

Delicious and easy buffalo chicken roll-ups recipe. Flaky, hot puff pastry filled with creamy chicken, mozzarella, and cheddar, with a zesty buffalo sauce!

Ingredients

  • 1 package (8 ounces) cream cheese, room temperature
  • 2 cups (280 g) rotisserie chicken, shredded, chopped
  • 1 cup (113 g) mozzarella cheese, shredded
  • 1 cup (113 g) sharp cheddar cheese, shredded
  • cup (84 g) buffalo sauce
  • 1 sheet puff pastry, thawed according to package instructions
  • 1 large egg, beaten
  • ranch dressing, for drizzling
  • extra buffalo sauce, for drizzling
  • parsley, for garnish

Instructions

  • Preheat oven to 400°F.* Line a large baking sheet with parchment paper. Set aside.
  • To a medium bowl, add cream cheese, chicken, mozzarella cheese, cheddar cheese, and buffalo sauce. Stir until combined. (This makes about 3 cups.) Set aside while you prepare the puff pastry.
  • On a lightly floured work surface, roll out the puff pastry into a 9×12-inch rectangle.
  • Evenly spread 2 cups of the buffalo chicken mixture over the pastry, leaving about a ½-inch border along one long edge.
  • Brush the ½-inch border of the puff pastry with some of the beaten egg to help seal the dough when rolling.
  • Starting from the opposite long edge, tightly roll the pastry into a log. Press to seal the edges.
  • Using a sharp knife, carefully slice the log into 12 equal-sized pieces. Brush the exposed edges of the pastry with the remaining beaten egg. Bake for 15-18 minutes.
  • Remove the roll-ups from the oven. Carefully top each with a spoonful of the remaining buffalo chicken mixture. Return to the oven to bake for 6-8 more minutes, or until the pastry is golden brown and the mixture is heated through.
  • Drizzle with buffalo sauce and ranch dressing. Garnish with parsley before serving.

Notes

*Air Fryer Instructions:
  1. Assemble the roll-ups as instructed.
  2. Place the assembled roll-ups into the basket of your air fryer. Depending on the size of the air fryer, you may have to work in batches.
  3. Air fry at 325°F for 10-12 minutes. 
  4. After 10 minutes, carefully top each roll-up with a spoonful of reserved buffalo chicken mixture.
  5. Air fry for an additional 2-3 minutes, or until the pastry is golden brown and the topping is heated through. Keep an eye on them, as cooking times may vary.
