Ingredients & Substitutions

Cream Cheese: You will need two blocks of cream cheese for the dip.

Salsa Verde: Salsa Verde is a green salsa that may or may not have a slight kick to it. You can choose the variety, from mild to medium to hot, with the amount of heat you want in the dip. You could also use a different kind of salsa like tomato salsa if preferred.

Cheese: I used Monterey jack cheese in the dip. However, you can certainly use a different kind of cheese like white cheddar, pepper jack, or Havarti cheese, as a few options. Even cheddar cheese would be delicious. When choosing a kind of cheese, just make sure it melts easily. Another hint for the creamiest dip is to shred your own block of cheese rather than buy the cheese already shredded. Pre-shredded cheese has a coating on it that can result in a grainy dip when melted.

Variations: Although this dip is delicious and addicting as-is, you can always tweak it to make it your own. Add cooked ground beef, a can of Rotel or other diced tomatoes, jalapeno peppers, and/or green chilis to the mix.

After cooking on low for 2 1/2 hours, reduce the setting to warm when serving. It can sit out for up to 2 hours before it should be stored in the refrigerator.

Can I Make Easy Queso Without a Crockpot?

Yes! If you don’t have a slow cooker, or it is being used for another delicious appetizer like cranberry meatballs, make the easy queso on the stovetop. To make it on the stovetop, simply add the three ingredients to a saucepan. Heat on low until completely melted. You could also use the double boiler method to melt the ingredients together.

How to Store

If you have any easy queso recipe left, don’t let it go to waste. Store it in an airtight container in the refrigerator for up to 3-4 days. Reheat it in the microwave, on the stovetop, or back in the slow cooker on the warm setting when ready to enjoy again.

    1. Cook it however long you would like, Kathy. I don’t want uncooked lumps in my dip so I chose an appropriate cooking time.
