It might be the biggest breakfast burrito you have ever seen! But, you are not expected to grab it by hand and eat it yourself (but take a picture if you do). Instead, it is a delicious breakfast or brunch option meant to be shared.

Ingredients & Substitutions

  • Tortillas: I recommend flour tortillas for this recipe. They are more substantial and able to hold all of the delicious fillings. Corn tortillas may become too fragile and break.
  • Hash Brown Patties: Cook up hash brown patties nice and crispy! Shredded hash browns would also work, spread out evenly over the tortillas.
  • Bacon: Using thick-cut bacon ensures that it doesn’t get ‘lost’ in the other ingredients. For crispy bacon and easy clean-up, bake the bacon in the oven. Place the strips of bacon onto a baking sheet lined with aluminum foil. Bake for 18-20 minutes at 415°F. No fuss, crispy bacon every time!
  • Ground Pork Sausage: Look for ground pork sausage (not ground pork). Ground pork sausage like my homemade breakfast sausage, is already seasoned.
  • Scrambled Eggs: I used six large eggs to make the scrambled eggs. Check out my recipe to use. Or, prepare them your favorite way.
  • Cheese: Sharp cheddar cheese has a bold flavor to help it stand out in this giant breakfast wrap. You could also try other kinds of cheese like mild cheddar, Monterey jack, pepper jack, or your favorite.
  • Toppings: Besides green onions and diced tomatoes, add your favorite toppings, too! I love Pico de Gallo, guacamole, hot sauce, sour cream, and black olives served with mine. Load it up!

Yes, you can get a head start on the giant breakfast wrap, making it convenient on busy mornings! To prepare it ahead of time, follow these steps:

  1. Prepare the Ingredients: Cook and prepare all the ingredients as directed in the recipe, including cooking the hash browns, bacon, sausage, and scrambled eggs, and shredding the cheese.
  2. Assemble the Wrap: Follow the assembly instructions in the recipe, layering the tortillas and filling in a baking dish. However, instead of baking it immediately, cover the dish tightly with plastic wrap or aluminum foil.
  3. Refrigerate: Once assembled, you can refrigerate the wrapped dish overnight. This allows the flavors to meld together and makes for an easy morning preparation.
  4. Bake: When you’re ready to serve, preheat the oven as directed in the recipe and bake the breakfast wrap according to the instructions. You may need to add a few extra minutes to the baking time if the dish is cold from the refrigerator.

You can also freeze the unbaked breakfast wrap for up to a month. When ready to bake, let it thaw in the refrigerator overnight.

Ingredients

  • 7 large flour tortillas
  • 6 crispy hash brown patties, prepared
  • 6 slices thick-cut bacon, cooked
  • 8 ounces ground pork sausage, cooked
  • 6 large eggs, scrambled
  • 2 cups (226 g) sharp cheddar cheese, shredded
  • green onions, chopped for garnish
  • tomatoes, diced for garnish

Instructions

  • Preheat the oven to 400°F. Spray a 9×13-inch baking dish with cooking spray.
  • To the baking dish, place one tortilla in each corner and one on each end (6 tortillas in all), overlapping each tortilla slightly to prevent any spaces.
  • Place a hash brown patty on top of each tortilla, followed by a piece of bacon. Then sprinkle the cooked sausage, scrambled eggs, and cheese evenly over the bacon.
  • Place another tortilla over the top, in the center.
  • Carefully fold the tortillas over the filling to completely enclose it.
  • Bake for 20-25 minutes, or until crispy. Garnish with green onions and tomatoes.
  • Serve warm.

I’m not understanding why we only see 1/2 of the video of you making the receipe – ad then video of you showing how you make your receipe – then ad, then another receipe altogether – like, what happened to finishing the first receipe. As good as your receipes look, I’d like to see the entire video of your receipe, not just the first 10 seconds of you putting the bacon in the oven, then the hashbrown patties, then making your scrabbled eggs and how you put your tortillas in your 9 x 13 pan – I’d like to see how you put it all together.
