Steak Fajitas Ingredients & Substitutions

  • Steak: Look for flank steak or skirt steak for this recipe. Both cuts are great for fajita recipes like this one. Although they are tougher cuts of meat, they tenderize well when marinated.
  • Fajita Seasoning: Skip the store-bought packet of fajita seasoning and make your own for the most flavor! The seasoning, olive oil, and lime juice will be the marinade for the steak. I also like to squeeze a little lime juice onto my fajita when assembled, too!
  • Vegetables: I stuck with the more traditional vegetables for fajitas–bell peppers and onions. Although I used red and green bell peppers, you could use any color you choose! The fajita veggies will also be seasoned with fajita seasoning.

How To Cut Flank Steak

Since flank steak is a bit tough, cutting it the right way makes it easier to chew! Here’s how you do it:

  1. Thaw the flank steak if it’s frozen. Let it sit at room temperature before slicing. This helps it cook evenly.
  2. Look at the surface of the meat to see the direction of the muscle fibers. They run in one direction.
  3. Slice the meat across the grain, which means cutting perpendicular to the muscle fibers. This breaks them up and makes the meat tender. Keep the slices the same thickness for even cooking.

Delicious Ways To Serve Steak Fajitas

  1. Tortillas: Serve the steak and veggies wrapped in warm corn or flour tortillas. Top with pico de Gallo, guacamole, sour cream, and shredded cheese for classic fajitas.
  2. Salad: Create a fajita salad by placing the steak and veggies on a bed of lettuce or mixed greens. Add toppings like corn, black beans, tomatoes, and avocado slices. Drizzle with a lime vinaigrette or creamy dressing.
  3. Bowls: Make fajita bowls with a base of rice or quinoa. Top with the steak and veggies, then add toppings such as diced tomatoes, cilantro, jalapenos, and a squeeze of lime juice.
  4. Nachos: Turn fajitas into nachos by layering tortilla chips with steak, veggies, cheese, jalapenos, and black beans. Bake until the cheese melts, then top with salsa, sour cream, and guacamole.
  5. Quesadillas: Use the steak and veggies to fill the quesadillas along with cheese. Grill or toast until the cheese melts and the tortillas are crispy. Serve with salsa and sour cream for dipping. (I do also have a copycat Chipotle steak quesadilla you may want to check out!)
  6. Stir-fry: Use leftover steak and veggies to make a quick stir-fry with rice or noodles.

Make Ahead: Prep Tips For Fresh, Quick Meals

Here are a few make-ahead prep tips for fajitas:

  • Make fajita seasoning in advance. It will last up to 6 months (or more) in a cool, dark place.
  • Cut and marinate the steak ahead of time. The steak can marinate for up to 24 hours!
  • Pre-cut the vegetables and store them in an airtight container in the refrigerator. They can last up to 3-4 days.

To store steak fajitas, first, let them cool to room temperature. Then, store in an airtight container in the refrigerator. They will last up to 3-4 days. Reheat in the microwave, skillet, or air fryer until heated through.

Air Fryer Steak Fajitas

Ingredients

  • 1 pound skirt or flank steak, sliced against the grain into ¼-inch strips
  • 3 tablespoons fajita seasoning, divided
  • 2 tablespoons extra virgin olive oil, divided
  • 1 tablespoon lime juice, plus more for garnish
  • 1 red bell pepper, seeded, halved, thinly sliced
  • 1 green bell pepper, seeded, halved, thinly sliced
  • 1 yellow onion, halved, thinly sliced into half-moons

Instructions

  • To a large bowl, add steak strips, 2 tablespoons fajita seasoning, 1 tablespoon olive oil, and lime juice. Stir to combine. Cover and refrigerate for 1 hour.
  • Preheat the air fryer to 390°F.*
  • In a medium bowl, combine the peppers, onions, remaining fajita seasoning, and remaining oil. Toss to evenly coat.
  • To the basket of your air fryer, add the veggie mixture. Air fry for 7 minutes. After 7 minutes, shake the air fryer basket to turn the veggie mixture. Then, add the marinated steak on top. Air fry for an additional 7-8 minutes, or until the steak is cooked to your liking.**
  • Serve on tortillas with pico de gallo, cheese, sour cream, or your favorite fajita toppings.

Notes

*Oven Instructions:
  1. Preheat oven to 400°F and line a large baking sheet with parchment paper.
  2. Place peppers and onions in a single layer on the prepared baking sheet.
  3. Bake for 10 minutes. Then, stir and add steak to the pan. Bake for 5-10 more minutes.
  4. Broil on high for 2-3 minutes to crisp up the steak and vegetables.
 
**When Is Steak Done?
Determining when your flank steak is done cooking is really up to you. A meat thermometer comes in handy to check for doneness. Just because the outside looks amazing doesn’t mean it’s ready to be removed from the oven or grill. Depending on your preference, here are some internal temperatures you can use as a guide when cooking steak:
125°F = Rare–Bright red center; cool to warm to the touch
130-135°F = Medium Rare–Dark pink red color center; warm to the touch
140°F = Medium–Pink center; completely warm to the touch
145°F = Medium-well–Mostly brown center with a tiny bit of pink in the middle
It’s important to remember that it will continue to cook a little bit after it’s removed from the oven or grill.
