If you want a warm, cheesy, and delicious dip to share, look no further than this Queso Fundido Skillet! Queso fundido actually translates to ‘melted cheese’, and this skillet dip has plenty of that! It starts with ground chorizo, sauteed onions, and jalapenos, then it is topped with Monterey Jack cheese before being baked in the oven until bubbly and golden. Queso Fundido Ingredients & Substitutions
- Meat: Ground chorizo sausage is the meat I chose to use in this dip. It is a little bit smoky and a little bit spicy (but not too bad). Other options would be Italian sausage or ground beef with added spices.
- Onion: Although I used a yellow onion, white onions, red onions, or shallots would also work.
- Jalapeno Pepper: I diced a jalapeno pepper to add to the dip for a little extra kick. (I also added some for garnish, too.) If you want the most heat, do not remove the membranes and seeds from the pepper; that is where the heat comes from. If you can handle even more heat, use a serrano pepper! Or, if you don’t want it spicy, use a green bell pepper.
- Cheese: With a name like queso fundido (melted cheese), it better be cheesy! And, this dip is very cheesy. I used four cups of shredded Monterey Jack cheese for the creamy, gooey, melted dip texture. For a milder flavor, mozzarella would work well. Or, try it with a blend of Mexican cheeses.
- Garnish: I added fresh tomatoes, jalapeno peppers, and cilantro for garnish. Simple, but fresh and flavorful! Feel free to add more options for garnishing like green onions, easy guacamole, sour cream, pico de gallo, jalapeno hot sauce, or whatever you are craving!

Here are a few of my favorite dipping options for this cheesy dip:

- Fresh vegetables like bell pepper strips or cucumber slices

- Pretzel bites

Crockpot Queso Fundido
If you are planning a party, keeping the dip warm in a crockpot or slow cooker is a great idea! To make queso fundido in a crockpot, first, cook the chorizo, onions, and jalapeno in a skillet on the stovetop. Next, transfer the meat and vegetables to the bowl of your slow cooker. Then, add the cheese. Cover and cook on low for 1-2 hours, stirring occasionally, or until the cheese is melted and bubbly. Keep it on the warm setting for guests to enjoy! Don’t forget to leave out a few options for garnish!
Storing & Reheating Queso Fundido Skillet
If you have any leftovers of this warm, cheesy dip (which I highly doubt you will), you can store them to heat up and enjoy later. To store it, first, let the dip cool to room temperature. Next, keep the dip in an airtight container in the refrigerator for up to 3-4 days. Reheat it in the oven or microwave until heated through.
Queso Fundido Skillet
Ingredients
- 1 pound ground chorizo sausage
- 1 small yellow onion, diced (about ½ cup)
- 1 small jalapeno pepper, finely diced
- 4 cups (452 g) Monterey Jack cheese, shredded
Toppings
- tomato, diced for garnish
- jalapeno pepper, diced for garnish
- cilantro, chopped for garnish
- warm tortillas, or tortilla chips for serving
Instructions
- Preheat oven to 400°F.
- In a large, oven-safe skillet (like cast iron) over medium-high heat, cook the chorizo sausage for 4 minutes, breaking up the meat as you go.
- Add onion and jalapeno. Continue to cook for 4-6 more minutes, or until the chorizo is cooked through. Discard excess grease. Then, reserve about ¼ cup of the cooked chorizo for topping.
- Top the cooked chorizo with cheese. Then, top with reserved chorizo.
- Bake for 10 to 12 minutes, or until the cheese has melted.
- Top with tomatoes, jalapenos, and cilantro. Serve warm with warm tortillas or tortilla chips.
