Ingredients & Substitutions
- Coleslaw Mix: Look for a fresh, crunchy coleslaw mix that combines shredded green and purple cabbage with sweet carrots. It’s perfect for holding up to the bold chipotle dressing!
- Black Beans: Canned black beans should be drained and rinsed well to remove the salty, starchy liquid and reduce sodium. If you don’t have black beans, you can also use pinto, kidney, or cannellini beans as tasty alternatives in this salad.
- Corn: I used canned corn (drained) for convenience, but fresh corn on the cob works great, too! Simply cook the ears, then cut the kernels off before adding to the salad for a sweeter, fresher flavor and a bit more texture. Either way, make sure the corn is drained or trimmed well to keep your salad from getting watery.
- Peppers: The jalapeño adds a nice, mild heat to this salad, but feel free to adjust it to your taste. Add more if you want an extra kick, or leave it out altogether for a mild version. The red bell pepper adds sweet crunch, and I love the bright color it gives to the salad. If you don’t have red bell pepper, you can substitute it with orange or yellow bell peppers, or even diced sweet mini peppers.
- Cilantro: Cilantro adds fresh, bright flavor. But, if you’re not a fan (I know some people get a different taste from it), feel free to leave it out. Or, try a small amount first; sometimes it grows on you!
- Taco Seasoning: For the most flavor, make homemade taco seasoning! It’s easy to make, and then you will have it on hand for more recipes like my Dorito Taco Pie!
- Chipotle Sauce: Look for a can of chipotles in adobo. But, just use the smoky, spicy sauce; no need to add the actual peppers unless you want extra heat. The sauce adds bold flavor without overpowering the dressing.
What Can I Use Instead of Chipotle Sauce?
No chipotle sauce? No problem! You can add a little smoked paprika for that smoky flavor, or stir in some mild salsa to mix things up. A splash of my jalapeño hot sauce or a pinch of chili powder works, too, if you want some heat without changing the creamy vibe.
Can I Use Regular Cabbage Instead Of Coleslaw Mix?
Yes, you can use regular cabbage instead of coleslaw mix! Just shred or finely chop green cabbage (and you can add some shredded carrots if you like) to get a similar crunch and texture for your Cowboy Cabbage salad.
Can You Make Cowboy Cabbage Ahead of Time?
Yes! You can prepare Cowboy Cabbage a few hours in advance. Mixing the dressing in ahead is fine; the flavors actually deepen as it sits. Just be sure to keep the salad refrigerated and add the Chili Cheese Fritos right before serving to keep them crunchy. If you prefer, you can store the dressing separately and toss it in just before serving. Both methods work well!
Is Frito Cowboy Cabbage Spicy?
I would say that Cowboy Cabbage has a mild to medium spice level, thanks to the jalapeño and smoky chipotle dressing. However, it is easy to adjust the heat! Add more jalapeño (and leave in the seeds) for an extra kick or leave it out altogether for a milder version.
How to Store Cowboy Cabbage Salad
Store leftover Cowboy Cabbage in an airtight container in the refrigerator for up to 3 days. Keep the salad chilled to maintain freshness, and add the Chili Cheese Fritos just before serving to keep them crunchy. If you haven’t mixed the dressing in yet, store it separately and toss it with the salad when ready to eat.

Ingredients
Salad
- 1 bag (16 ounces) coleslaw mix
- 1 can (15 ounces) black beans, rinsed, drained
- 1 ½ cups (247.5 g) canned corn kernels, drained
- 1 medium jalapeño pepper, seeded and finely diced
- 1 small red bell pepper, seeded and finely diced
- 3 green onions, finely sliced
- ¼ cup fresh cilantro, finely chopped
- 1 tablespoon taco seasoning
- ½ teaspoon ground cumin
Chipotle Dressing
- ½ cup (115 g) sour cream
- ½ cup (116 g) mayonnaise
- ¼ cup fresh lime juice, about 2 limes
- 2 tablespoons chipotle sauce from a can of chipotles in adobo, just the sauce, not the peppers
Topping
- Chili Cheese Fritos, for topping
Instructions
- To a large bowl, add coleslaw mix, black beans, corn, jalapeño, red bell pepper, green onions, cilantro, taco seasoning, and cumin. Toss everything together until evenly combined.
- In a separate medium bowl, whisk together sour cream, mayonnaise, lime juice, and chipotle sauce until smooth. This makes about 1 ¼ cups of chipotle dressing.
- When ready to serve, pour the dressing over the coleslaw mixture. Toss well until everything is coated.
- Just before serving, top with a generous handful of Chili Cheese Fritos for extra crunch.
- Serve immediately.
