Garlic Parmesan Chicken Skewers are cubes of chicken tossed in a flavorful blend of mayonnaise and spices, cooked in an air fryer, and drizzled with garlic parmesan sauce. Ingredients & Substitutions:
Chicken: Although I used boneless, skinless chicken breasts in this recipe, you could use chicken thighs. For even cooking, cut the chicken into pieces close to the same size.
Mayonnaise: The mayonnaise is the base for the coating of the chicken. It brings moisture to the chicken as well as holds the spices together. Try homemade mayonnaise for this recipe!
Spices: To the mayonnaise, add garlic powder, paprika, salt, and pepper. Easy, but so flavorful!
Garlic Parmesan Sauce: The sauce really takes the chicken skewers to a new taste level! The parmesan cheese does shine in each bite, and it is a simple sauce you can brush or drizzle over the chicken.
Wooden Skewers vs Metal Skewers
Both wooden and metal skewers are suitable for making these Garlic Parmesan Chicken Skewers, including in the air fryer. If opting for wooden skewers, soak them in water for at least 30 minutes to prevent charring during cooking. For metal skewers, ensure they fit in the air fryer basket (no need to soak). If using wooden skewers that are too long for the basket of the air fryer, they can be broken in half.
Can I Assemble Garlic Parmesan Chicken Skewers Ahead Of Time?
Yes! To have the skewers ready to go when you are, you can get the chicken cubes tossed in the mayonnaise coating and threaded onto the skewers. Then, store them, covered, in the refrigerator up to overnight.

Reheat them in the oven, microwave, or skillet. Store any leftover garlic parmesan sauce in an airtight container in the refrigerator. Reheat and brush it over the reheated chicken before serving.
Garlic Parmesan Chicken Skewers
Ingredients
- wooden skewers, soaked in water for 30 minutes
Chicken
- 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- ¼ cup (58 g) mayonnaise
- 1 tablespoon vegetable oil
- 1 tablespoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
Garlic Parmesan Sauce
- ½ cup (1 stick / 113 g) unsalted butter, melted
- 1 tablespoon garlic, minced
- ¼ teaspoon black pepper
- 1 tablespoon fresh parsley, minced
- 2 tablespoons parmesan cheese, finely grated
Instructions
Chicken
- In a large bowl, combine mayonnaise, oil, garlic powder, paprika, salt, and pepper. Add chicken. Toss to evenly coat.
- Working one skewer at a time, thread 4-5 chicken cubes onto each.
- Air fry* at 400°F for 11-12 minutes, flipping halfway, or until the chicken has reached an internal temperature of 165°F. While the chicken is cooking, prepare the sauce.
Garlic Parmesan Sauce
- To a small saucepan over medium heat, add butter, garlic, and pepper. Once the butter has melted, remove from heat. Stir in the parmesan and parsley.
- Transfer the cooked skewers to a plate. Drizzle or brush with the sauce. Serve hot.

- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Place the coated cubes of chicken onto the skewers, then onto the lined baking sheet.
- Cook the chicken skewers for 20-25 minutes, flipping halfway through, or until the chicken reaches an internal temperature of 165°F.
- Remove from the oven. Drizzle or brush with garlic parmesan sauce.
- Thread the seasoned chicken onto the skewers. (Wait until after grilling to drizzle with the garlic parmesan sauce.) Grill over medium-high heat for 8-10 minutes per side, or until the chicken reaches an internal temperature of 165°F.
- Brush the grilled chicken with the garlic parmesan sauce.
