Spicy Sriracha Hasselback Kielbasa Bites are bite-sized pieces of kielbasa cut in a Hasselback style to hold creamy, tangy, and spicy Sriracha mayo. They’re easily cooked in an air fryer until crispy, but you can also use the oven. Perfect as a snack or appetizer, these bites are sure to be a hit at all your parties and game-day gatherings! Yes, they are a great appetizer, but I also love to serve these Hasselback kielbasa Bites as the main course, paired with a delicious side dish for a complete meal. It all started with my Mustard Hasselback Kielbasa Bites. They were so delicious I added more flavors like Maple BBQ Hasselback Bites and this one!

Ingredients & Substitutions

  • Kielbasa: Kielbasa, also called ring sausage, is a tasty and lightly smoked sausage that comes pre-cooked, making it easy to use in many dishes. In fact, I have been using it in so many recipes, I have compiled a list of some of my favorite Kielbasa recipes! (And yes, this will be added to that list.) If you want to try something different, you can explore other sausages like Andouille, Mexican Chorizo, or other types.
  • Mayonnaise: If you don’t have any on hand, make homemade mayonnaise to use in the Sriracha mayo.
  • Sriracha: Sriracha is spicy, and it is easy to use too much! (Take it from me, it has happened!) I used 4 1/2 teaspoons (about 1 1/2 tablespoons) of Sriracha with the mayonnaise. It was a good amount of heat, but not too overpowering. It’s easy to customize the amount of Sriracha to make the mayo has hot or as mild as you and your taste buds can handle!
  • Lime Juice: Freshly squeezed lime juice adds a fresh and zesty taste to the Sriracha mayo, balancing the creaminess and spiciness. It also helps brighten the flavor and makes the mayonnaise taste even better! You could also use lemon juice.

How Spicy Are Sriracha Hasselback Kielbasa Bites?

The spice level is subjective, of course, but I think these have a more moderate spice level (and I can’t handle too much heat). The sriracha has a nice kick, but it is balanced by the mayonnaise and lime juice. I like that it is still flavorful without being overwhelmingly hot. I actually dipped my kielbasa bites into the extra sriracha mayo, and the spice level was still fine (to me). If you prefer less spice, you can adjust the amount of Sriracha. Or, use a milder sauce (like mayonnaise with a touch of hot sauce).

Perfect Side Dishes To Complete Your Spicy Sriracha Mayo Hasselback Kielbasa Bites

Yes, these are a quick, easy, and delicious appetizer. But, they can easy be served as the main dish with a few side dishes. Here are some sides that pair well with the kielbasa bites:

  4. Roasted Vegetables like Brussels sprouts, roasted carrots, or parmesan asparagus

Storing & Reheating Hasselback Kielbasa Bites

If you have any leftover kielbasa bites (and that’s a big if!), let them cool to room temperature first. Then, put them in an airtight container in the refrigerator. They will last for 3 to 4 days. You can reheat the bites in the air fryer, microwave, or oven. The leftover sriracha mayo for dipping can also be stored in the refrigerator. Just cover it, and give it a stir when you serve it with the bites!

Spicy Sriracha Hasselback Kielbasa Bites

Delicious Sriracha Hasselback Kielbasa Bites: these a perfect snack or appetizer for your parties and game-day gatherings! Literally the BEST flavor!

Ingredients

  • 2 rings (13.9 ounces each) Kielbasa
  • ¾ cup (174 g) mayonnaise
  • 4 ½ teaspoons Sriracha
  • 1 ½ teaspoons freshly squeezed lime juice

Instructions

  • Slice the Kielbasa into ¼-inch slices, but not all the way through. To do this, place the kielbasa between two chopsticks or skewers. (These will prevent you from cutting through the kielbasa completely.) Using a sharp knife, slice in a downward motion, stopping at the chopsticks.
  • Slice sausage crosswise into 1-inch bite-sized pieces (about 3 rings per piece) for a total of about 20 bites per ring, or 40 bites for both rings. Place the bites into a large bowl or onto a baking sheet.
  • In a small bowl, combine the mayonnaise, Sriracha, and lime juice.
  • Brush about half of the spicy sriracha mayo sauce over the Kielbasa bites, making sure to get the sauce in between each cut section. Store the rest of the sauce in the refrigerator, covered, for after cooking.
  • Arrange the Kielbasa bites in a single layer into the basket of your air fryer. Depending on the size of your air fryer, you may have to work in batches.
  • Air fry* at 400°F for 7-9 minutes, or until browned, shaking the basket of the air fryer halfway through cooking.
  • Remove the bites from the air fryer and set them on a large platter or baking sheet. Brush the tops of the kielbasa bites with reserved sriracha mayo (optional) or use for dipping.
  • Garnish with parsley.

Notes

*Oven Instructions:
  1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. Prepare the Kielbasa bites as instructed. Then, place each section onto the lined baking sheet.
  3. Bake for 25-30 minutes, or until the kielbasa is browned.
  4. Garnish with parsley. Serve with reserved sriracha mayo.
