Crockpot Cheesy Corn

I have to say, this Crockpot Cheesy Corn is right up there with my Cheesy Crockpot Scalloped Potatoes when it comes to cheesiness, flavor, and ease of putting it all together. Both are tasty side dishes that go with everything from Roasted Pork Loin to Pepper Crusted Beef Tenderloin. Ingredients & Substitutions

  • Corn: I used five cans of drained corn kernels. You could also use fresh corn or frozen corn that has been thawed. If using fresh or frozen (thawed), you will need about 8 1/2 to 9 cups of corn.
  • Cheese: This is cheesy corn, so I loaded the recipe with three cups of shredded cheese! I used 2 cups sharp cheddar and 1 cup Monterey Jack. You could experiment with your favorite blend of cheeses, too.
  • Milk: Whole milk helps the corn get nice and creamy. You could use half-and-half or heavy whipping cream for an even creamier consistency. For a lighter version, try milk that is lower in fat.
  • Butter: Unsalted butter helps you control the amount of salt used in a recipe like this one. You may want to lessen the amount of salt added if using salted butter. You can always salt to taste when it’s done!
  • Cream Cheese: I used a whole block of cream cheese for a creamy consistency (and more cheese)! You could substitute it with Mascarpone cheese or Neufchâtel cheese.

Customize Your Cheesy Corn: Delicious Add-ins To Try

This crockpot cheesy corn is delicious as-is, but it is always fun (and tasty) to add ingredients to customize to your taste buds! Here are a few options you could try:

  • Bacon
  • Jalapeno peppers
  • Bell peppers (I like these for a little color!)
  • Sauteed or caramelized onions
  • Different cheese variations
  • Spices (like smoked paprika, cumin, or chili powder)
  • Crushed crackers or breadcrumbs for a little extra texture

How to Store Crockpot Cheesy Corn

To store leftovers of the cheesy corn, first, let it cool to room temperature. Then, keep it in an airtight container for up to 3 days in the refrigerator. Heat it up in the microwave or on the stovetop. If you freeze the corn, it will last up to a month. Let it thaw in the refrigerator before warming it up. Don’t forget to label and date your freezer-safe container.

Try this flavorful and easy-to-make Crockpot Cheesy Corn recipe. Creamy, melted cheese over corn cooked in a slow cooker.

Ingredients

  • 5 cans (15.25 ounces each) corn kernels, drained
  • 2 cups (226 g) sharp cheddar cheese, shredded
  • 1 cup (113 g) Monterey jack cheese, shredded
  • ½ cup (122.5 g) whole milk
  • 1 tablespoon granulated sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ¼ cup (½ stick / 57 g) unsalted butter, cubed
  • 1 package (8 ounces) cream cheese

Instructions

  • To the bowl of a slow cooker, add corn, shredded cheese, milk, sugar, garlic powder, salt, pepper, butter, and cream cheese. Stir to combine.
  • Cook on high for 1 hour or low for 2-3 hours.
  • Serve warm.
