Cheesy Hamburger Rice Dip

Hamburger and Rice Dip is made in a cast-iron skillet. This dip is all cooked on the stovetop; no need to turn on the oven. It’s a hot, cheesy dip that is SO GOOD on tortilla chips or used as a bread dip. It is the perfect appetizer for game days, gatherings, or just to have on hand for a snack. The Mexican rice and taco seasoning added to the mix gives it just a little twist to a classic cheesy hamburger dip.

Ingredients & Substitutions

  • Ground Beef: Ground beef is the ‘meat’ of this dip, literally and figuratively! If you prefer a lighter and different flavor, try ground turkey, chicken, or pork.
  • Taco Seasoning: If you don’t have a packet of taco seasoning, make your own! You probably have the seasonings you need; plus, homemade seasonings are packed with the most flavor!
  • Mexican Rice: Look for a packet of Mexican rice to add to the dip. If using plain white or brown rice, add your own seasonings, like cumin, paprika, garlic, and tomato paste. Spanish rice or any seasoned rice mix also works well.
  • Tomatoes: For ease, I used a can of diced tomatoes. (Do not drain the tomatoes.) Or, use freshly diced tomatoes if you have them, and add a bit of water or broth for the liquid. Fire-roasted or tomatoes with green chilies can add a nice kick.
  • Velveeta: Velveeta melts smoothly and creates a creamy, cheesy texture that coats everything. I have a copycat Velveeta recipe you could try! Or, use shredded cheddar cheese mixed with cream cheese for a similar creaminess.

Can I Make Cheesy Hamburger and Rice Dip Ahead Of Time?

Absolutely! If you want to make this dip ahead of time, just store it in a covered container in the refrigerator. When ready to serve, heat it up in the microwave, on the stovetop, or in a crockpot on the warm or low setting (checking and stirring frequently).

Can I Make this Dip in a Slow Cooker?

Yes! You can definitely make this in a slow cooker. First, brown and drain the hamburger. Next, add in the browned hamburger and all the other ingredients that go into the dip into your slow cooker. Then, cook on low for 1-2 hours. Finally, change the setting to warm, making sure to stir it once in a while if you are not serving it right away.

  • Serve with tortilla chips.

  1. This sounds delicious! One question tho, it calls for Mexican Rice…is there a recipe for this, or what kind of seasonings do I d to make it? Would love to give it a go!

    1. Go were you find the flavored rice pouches and rice a roni in the supermarket. You should find some that are named “spanish rice” or “mexican rice”.
